Taco Cabana in Rockwall, Texas: Dallas Restaurant Review

My hubby and I often sneak off to Taco Cabana during the day if we need a quick meal while we’re working on fixing up a property or simply running around doing errands.
For lunch today, that’s exactly what we did.
We stopped at the Taco Cabana in Rockwall, Texas (Dallas) off I-30 by the lake.
It sure looked like a nice location and everything was clean and new.
We ordered our usual favorite – Bean and Cheese tacos with green salsa for me, and red salsa for Kenney.
In general, we love Taco Cabana’s refried beans because they’re so flavorful and smooth and the tortillas are so fluffy, warm and fresh. However, today, they had absolutely no flavor whatsoever…it’s like they forgot to season them at all.
So, I loaded them up with the green salsa, and that had no flavor at all either…

Chipotle Steak Salad Bowl Rocks: Dallas Restaurant Review

I’ve never had a Chipotle restaurant meal that I didn’t love.
Their burritos are huge like FreeBirds, their salad bowls are my favorite, burrito bowls look amazing, etc.
They have chicken, steak, ground beef, barbacoa and I believe one other type of meat to choose from.

Vegetarian Chili Made in a Bare Bones Fixer Upper Investment Property Kitchen

That’s right! You can be healthy and still cook real recipes, even if you only have a bare bones kitchen when fixing up an investment property…
We spend so much time at our rehab properties that we often end up staying in one to get more cleaning and repairing done, which leaves us with limited seasonings, fresh foods and large appliances to work with.
For dinner today, I made a vegetarian chili out of what we had left in our pantry in this real estate flip house.
My husband laughed when I told him what I was going to make because he didn’t think it was possible with the little bit of food we had in the cupboard.
All I used was 1 bag of dry pinto beans, which I rinsed off in collander and put into an electric skillet filled with water and turned on high with the lid on and vent open.
NEVER use salt when cooking beans (or anything acidic like citrus or vinegar based sauces), or the beans take a very long time to cook through properly.

Melania’s “Killer” Chimichurri Recipe – aka Pico de Gallo
My new friend and neighbor, Melania McCarley, from Dallas, Texas made us this recipe this weekend and she told us it was “killer”.

Melanie Stewart’s “Best Burger in Dallas” at Lone Star Volleyball Club
Now, as you all know, I love BBQ and I love burgers!
What you may not know is that we play sand volleyball every weekend and sometimes during the week when it’s nice weather here in Dallas – either at Lone Star Volleyball Club or at Yucatan Beach Club in Coppell, Texas – they’re right across the street from each other.
Well, when we play at Lone Star, as long as Melanie Stewart is working that day, she makes us the “Best Burgers in Dallas”!
She’ll make you a Lone Star hamburger for $3.50, but it’s hard to resist adding cheese and freshly grilled bacon! Yes, I said grilled bacon! How can you resist, right?

How to Grill Buffalo Burgers – My First Taste

When I say “Buffalo”, I don’t mean the city, although I live very close to Buffalo!
I mean the wild animal roaming the plains of North America – well, they used to anyway.
Now, they’re farmed for their hide and meat.
Kenney and I decided to make Buffalo Burgers the other night after seeing that the price at Whole Foods Market was the same as the ground beef.
What’s wonderful about buffalo meat is that it’s very lean and tasty meat that’s not at all gamey when you buy it in stores.
They made some beautiful burgers for the grill.
How Did I Season Those Buffalo Burgers?
This time, I went pretty plain because I really wanted to enjoy the subtleties of the meat itself without anything changing the flavor.
I used some pepper, a tiny bit of sea salt and a little bit of freshly minced garlic.
