Steamed Ginger Lemongrass Mussels:
In this recipe, I used a white wine from Jackson-Triggs – their Pinot Grigio.
However, you could use sake, coconut rum, lychee liqueur, vodka…use your imagination.

Ingredients:
- 1 lb fresh, live mussels
- 2 – 3 tbsp coconut oil
- 1 tbsp butter
- 6 mushrooms – finely sliced
- 1 bay leaf
- 2 citrus leaves
- 4 – 5 lemongrass leaves
- 1 tsp red chili flakes
- 1 tsp freshly cracked black pepper
- 2 tbsp freshly grated ginger
- 1/2 onion – optional; diced
- 1 – 2 cloves garlic – optional; finely minced
- 1/2 cup chicken broth
- 1/2 cup white wine – or sake; I used Jackson-Triggs Pinot Grigio.
- 4 limes – using the zest & juice of 2 limes during cooking, fresh juice of 1 lime before serving, and wedges for serving from 1 lime
- 2 tbsp fresh cilantro – finely minced
Instructions:
- Scrub mussels under cool water & de-beard, if necessary.
- Preheat a large frying pan with coconut oil & butter, on medium-low to medium heat.
- Finely slice mushrooms & sautée, until softened, adding bay leaf, torn citrus leaves & lemongrass leaves, cut into segments.
- Add red chili flakes, freshly cracked black pepper & freshly grated ginger, and continue sautéing.
- Once softened, add chicken broth & white wine, and bring up to a simmer for 3 – 5 minutes, stirring to combine ingredients.
- Right before adding mussels, add lime zest & juice from 2 limes, and stir through to combine.
- Add mussels, cover with a lid & shake to coat mussels with flavors.
- Steam mussels, until they open.
- Note: Discard any mussels that do not open, or are cracked.
- Before serving, finely mince cilantro to sprinkle on top & freshly squeeze the juice of 1 lime over top.
- Serve immediately with lime wedges.
These mussels are so flavorful, releasing their own juices to the broth, creating an experience everyone will love.
Enjoy them as an appetizer, as a group, or as a great meal for 2 or 3 people.
Serve with a fresh, crusty baguette, to sop up the juices, or with rice, for a more complete dinner.
Steamed Ginger Lemongrass Mussels are a quick, easy & delectable seafood dish – I hope you try it out for your next special event.
