Restaurants and Fun in Branson, Missouri
As you know, when I travel, I also think about where we’re going to eat - the FOOD is what’s exciting to me!
So, we’ve been to Columbia and many other parts of Missouri driving through, but were contemplating taking a swing through on our way home to Canada.
We talked about stopping in Branson for some theater and entertainment, but what about the grub?
Firstly, we talked about staying at the Hilton Promenade at Branson Landing - It’s supposed to be beautiful and in the center of all the fun, plus, we can stay with our dogs too.
Then, I Googled a couple restaurants and looked at their reviews to find that the Candlestick Inn has some great food.
It’s under new management now and has some stellar reviews thus far. Highlights: calamari, avocado salad, filet mignon and prime rib, stuffed lobster, crab cakes and tomato based crab soup - those all sound yummy to me!
Apparently, it’s upscale, but well worth the price with a great view (of what, I’m not sure, but it was worthy of a few review comments).
Where I would really love to go is Dolly Parton’s Dixie Stampede Dinner & Show! It sounds like Medieval Times, but Dixie Style - (I love Dolly…LOL)
It had really high ratings for food, value, service and atmosphere…
That way, I can get my entertainment and food together! LOL…Have any of you been there? Let me know by Commenting!
We could also stay at the Hilton Branson Convention Center Hotel - they take pets too and they have a great looking pool!!!

Florida Dreaming for a Foodie Vacation!
When is the best time to go to Florida for a vacation?
Seriously? When isn’t?
Anytime’s a good time for vacationing in Kissimmee - not only is it beautiful in December or July, for a foodie, it’s fabulous all the time!
We went on our honeymoon there years back now, and if we went today, I’d want to bring my mom too!
My mom’s a serious foodie too and would love checking out Emeril’s Orlando restaurant and Emeril’s Tchoup Chop…Emeril Lagasse, that is…
If you’re on my cooking site right now, you’ll probably know him - the guy who says “BAM” & “kick it up a notch”…
We love his twist on Cajun, Creole and French cuisines!
However, I would love to take my mom to Medieval Times in Kissimmee - we went when I was about 5 yrs old when my parents took me to Disney World.
We went a few years back and it was as woderful as I had remembered it! A fabulous show with marvelous horses and peregrine falcons, knights and maidens.
You are served a your section’s wench and you get to wear crowns and the whole thing. Not only that, you don’t get utensils to eat, it’s all hands baby - and lots of beer to boot.
It’s really tasty food too! Just a really fun experience!
We stayed at this great resort on the water for part of our vacation, and the first part of it, we stayed at the Record Motel…
…I know, I know…it sounds like a cheesy, cheap place - but it wasn’t! It was really inexpensive, but quaint, right in the middle of everything in Kissimmee, and extremely clean with a pool!
I highly recommend it, if you’re seriously budgeting.

Spice Up Your Meals with a Splash!
…A Splash of Rice Vinegar that is!
“Vinegar?”, you may ask…Yes!!!
Try splashing it on freshly cut ripe tomatoes or cucumbers, green salads, hot salads, roasted potatoes, white rice, grilled or broiled seafood, or pasta dishes.
How about adding it to bean salads, coleslaw or to create a unique and zippy sauce?
Why not marinate beef, pork, chicken or seafood with rice vinegar?
Especially if you’re making any type of Asian dish or just looking for a new “je ne sais quoi”, rice vinegar or seasoned rice vinegar will do the trick.
What’s cool, though, about Nakano seasoned rice vinegars, is you’re not limited to Asian food, as they have different flavors that will accomodate anyone’s palate: Original Seasoned, Roasted Garlic, Basil & Oregano, Red Pepper, Balsamic Blend, and Italian Herb.
You can use them in place of balsamic, wine, cider or malt vinegars to give a subtle, but distinctive flavor to your “regular” dishes.
One of my favorite ways to use vinegar, besides mixed with olive oil for salad dressing or bread dipping sauce, is for a “buerre blanc” sauce on pasta or seafood.
Basically, it’s vinegar, butter, sugar, shallots and pepper. Serve over linguine topped with seafood like shrimp, lump crab meat or lobster! Yum!

How to Can and Preserve Food
My mother and I were shopping @ Canadian Tire a few days ago and found a great book while we were picking up our canning supplies for this year’s preserving of fruits and vegetables.
It is the Bernardin Guide to Home Preserving - for those of you who aren’t aware of Bernardin, it is the leading company that sells canning and preserving supplies like mason jars, lids, pectin and everything else you could need.
Inside of this 148 page book, you’ll get the necessary basic information about canning and preserving methods, as well as hundreds of fabulous recipes of any kind for jams, jellies, sauces, pickles, soups and the like with their corresponding approved canning method to ensure growth of mold and bacteria is prevented!

How to Make Rice More Exciting
Now that you know how to tackle cooking any kind of rice, you need to know how to make it taste amazing.
Don’t just always feed your family plain, white rice with butter and salt. Yes, this is awesome sometimes…
…But you can really take your rice to another level, and make it something to take note of at dinner.
Are you cooking Indian food?
Why not add some curry powder or paste, some sesame seeds and green onion, or some chili paste? Try making it with Coconut Oil instead of butter. I love using coconut milk instead of the water in Indian rice recipes.
Are you pairing rice with an American meal of steak or chicken breast? Why not add some green onions, finely sliced mushrooms, minced garlic and use chicken or beef broth instead of water? If you’re serving pork chops or the like, try using your reserved bacon fat from breakfast instead of butter.
How about an Asian dish? Try using soya sauce in the pot instead of salt, finely sliced green onions are a must, some sesame seeds. How about using lemongrass? Yum!!! You can even try using fish broth instead of the water.
