You Can Grow Gourmet Mushrooms at Home
December 7, 2009 by Kimberly · Leave a Comment
Yes, you can grow your very own gourmet mushrooms at home over and over again.
Mushroom patches can be started by logs already prepared or with kits you purchase.
I had compiled a list of products for my new friend, Lynn Ogryzlo – author of Niagara Cooks, and figured I’d share it with the rest of the world of food lovers out there that frequent my blog.
I don’t know about you, but I absolutely love mushrooms and try to figure out ways to incorporate them into dishes all the time. They’re so healthy for your immune system!
However, I find that my frequent shopping trips to the grocer can prove to be expensive when buying gourmet mushrooms.
These are marvelous gifts for food lovers, especially at Christmas, and you can keep growing mushrooms over and over again…

- One 9-10″ Shiitake Mushroom Log – $19.95

Every single birthday or special occassion, he asks me to make homemade macaroni and cheese, alongside mushrooms with port wine and balsamic sauce. Strange, but true! It’s his 2 favorite dishes I make in one…LOL

Health Benefits of Reishi Mushrooms
How Can Reishi Mushrooms Benefit You?
By Keith Kearney
It’s not a big secret that mushrooms have been known to be very good for you. Reishi mushrooms are one of the top three medicinal mushrooms that has been used for centuries in ancient Asian cultures. The great thing about the Reishi mushroom is the balance it gives to both your body and mind.
This ancient ingredient has been used to help treat many ailments such as liver disorders, bad circulation and for cardiovascular health. Though, the most common use for the Reishi mushroom is for people suffering from asthma or other respiratory problems. One study has shown that over two thousand people suffering from extreme bronchitis used these Reishi mushrooms in a cough syrup and almost all patients were feeling better within two weeks of this treatment.
This component has also shown that it can help improve hepatitis patients and reduce hypertension. One study testifies that nearly 92% of 355 study patients suffering from hepatitis showed improvement in their overall health. Though it helps treat many ailments, liver disease is the longest standing traditional utilization. Many chemotherapy patients have used Reishi mushrooms and noticed Read more

How to Cook with Dried Mushrooms for Recipes
October 27, 2009 by Kimberly · 6 Comments

Many mushrooms come in dried forms and some exotic mushrooms only come in dried forms in stores.
Trumpet, lobster, maitake, morrels, chantrelles, porcini, miscellaneous “field” mushrooms, and truffles all come dried.
When you see them in their packages, you might be thinking, “Hmmm…That sounds cool, but how can I use them?”
First off, dried mushrooms are great additions to creamy dishes, sauces, pastas, stuffings, soups and egg dishes too.
However, you must rinse them under Read more

Mushroom Week on Cooking with Kimberly!
October 27, 2009 by Kimberly · 4 Comments

My favorite “vegetable” (well, it’s really a fungus, but whatever…LOL) is the mushroom!
It was understood as I grew up that mushrooms were tasty, yes, but they didn’t have much nutritional benefits other than a bit of fiber and lots of water.
Until last year, this is what I thought. However, mushrooms are chock full of all kinds of special nutrients, vitamins and minerals that can only be found in mushrooms!
In fact, mushrooms are especially healthy for your immune system. Try making a creamy mushroom soup if you’re sick, instead of or in addition to your favorite chicken soup!
The thing is, just until recent years, we were pretty much stuck with only being able to access white button mushrooms at the store. These are probably the least nutritious mushrooms there are that are edible.
Nowadays, you can easily find shiitake, oyster, kind oyster, enoki, crimini and portabello mushrooms to mention a few…

Taco Cabana in Rockwall, Texas: Dallas Restaurant Review
October 9, 2009 by Kimberly · Leave a Comment

My hubby and I often sneak off to Taco Cabana during the day if we need a quick meal while we’re working on fixing up a property or simply running around doing errands.
For lunch today, that’s exactly what we did.
We stopped at the Taco Cabana in Rockwall, Texas (Dallas) off I-30 by the lake.
It sure looked like a nice location and everything was clean and new.
We ordered our usual favorite – Bean and Cheese tacos with green salsa for me, and red salsa for Kenney.
In general, we love Taco Cabana’s refried beans because they’re so flavorful and smooth and the tortillas are so fluffy, warm and fresh. However, today, they had absolutely no flavor whatsoever…it’s like they forgot to season them at all.
So, I loaded them up with the green salsa, and that had no flavor at all either…

Just Honest Popcorn from the Rocky Mountain Popcorn Company Review
October 8, 2009 by Kimberly · Leave a Comment
We travel a lot and we often drive. So, that means stopping at rest areas and gas stations where we often grab a few snacks and drinks.

This past week, my hubby and I chose a couple bags of popcorn, Just Honest Caramel Popcorn and Just Honest Butter Popcorn from the Rocky Mountain Popcorn Company.
My choice, the caramel flavor, was really fabulous! Seriously, it tasted just like homemade caramel corn.
The butter flavor, tasted like butter, but not exactly like real butter. However, it was quite delicious too.
Just Honest Popcorn is hot-air popped and made with real ingredients for a great taste.
Their new bags are made to Read more

Jimmy Buffett’s Land Shark Island Lager Review
September 15, 2009 by Kimberly · 2 Comments
I had the opportunity to try Land Shark Lager yesterday, which is apparently affiliated with Jimmy Buffett’s “Margaritaville” brand.
On the bottle, it says it’s “Original Island Lager” – and after you take one sip of it, you’ll understand why.
It’s a light lager that tastes similar to a combination between a Corona with lime and a Bud Light with a twist of orange.
It’s light, slightly sweet and flavorful! Absolutely delicious – you can almost hear the waves on the sand and smell that clean, ocean air. What a great beer to pack in a cooler and head down to the lake or enjoy pool-side.
This is one of my new favorite beers. I wonder how great it would be to cook with – hmmm…
Much thanks to our friend, Kent!

Vegetarian Chili Made in a Bare Bones Fixer Upper Investment Property Kitchen
September 10, 2009 by Kimberly · Leave a Comment
That’s right! You can be healthy and still cook real recipes, even if you only have a bare bones kitchen when fixing up an investment property…
We spend so much time at our rehab properties that we often end up staying in one to get more cleaning and repairing done, which leaves us with limited seasonings, fresh foods and large appliances to work with.
For dinner today, I made a vegetarian chili out of what we had left in our pantry in this real estate flip house.
My husband laughed when I told him what I was going to make because he didn’t think it was possible with the little bit of food we had in the cupboard.
All I used was 1 bag of dry pinto beans, which I rinsed off in collander and put into an electric skillet filled with water and turned on high with the lid on and vent open.
NEVER use salt when cooking beans (or anything acidic like citrus or vinegar based sauces), or the beans take a very long time to cook through properly.
I put some Read more

Cuisinart Stainless Steel Coffee Maker Review
September 1, 2009 by Kimberly · Leave a Comment
If you’re in the market for a new coffee maker, consider the Cuisinart Stainless Steel Coffee Maker.
I love it because not only does it match the rest of our stainless steel appliances in our kitchen, but it’s heavy duty.
You’re getting top of the line quality for a better price.
It’s programmable – you can program more than 1 time to brew.
When you fill it with water, and only want to heat it, say for tea, it only takes 4-5 minutes to finish! That’s so fast!
It’s easy to clean and you won’t Read more
