The drippings from the lamb pair with the heartiness of this cruciferous vegetable perfectly, in that it can stand up to the strong flavor.
Perfect for an Autumn, Winter or Spring meal – try this on St. Patrick’s Day or Easter, for a treat!

Never get rid of your drippings from your roasts – there are so many ways to use them – they are precious.
For this recipe, I’m using a beautiful Ontario Savoy Cabbage from Harvest Barn Country Markets – fresh from the source & what a beauty!

Ingredients:
- lamb drippings + deglazing liquid – from a roast of lamb; at least 2 tbsp
- 1/2 – 2/3 head of savoy cabbage
- sea salt – to taste
- freshly ground black pepper – to taste
- a few dashes cayenne pepper
- 1 tbsp butter
Instructions:
- Collect the drippings from a roast of lamb. Deglaze the roasting pan with water or wine, as desired.
- Cut cabbage into bite-sized pieces.
- Add drippings, deglazing liquid, cabbage & spices to a roasting pan or baking dish, tossing to combine ingredients.
- Spray the shiny side of a piece of aluminum foil with cooking spray, large enough to cover the baking dish.
- Tip: If you think it needs a bit more liquid than the deglazing liquid, add some water, wine or beer, as desired.
- Braise in the oven for at least 30 minutes, or until soft & fork tender.
- Note: Toss cabbage about halfway through cooking.
- Taste test & adjust seasonings, as desired.
- Serve warm.
Serve with lamb, on the side, or with another beautiful roast, whether it’s a weeknight meal, or a fabulous feast when entertaining guests.
