Banana cookies have hardly impressed me in the past, as they are usually quite heavy & chewy. This recipe creates a lovely, crispy cookie on the outside, with a light, fluffy inside.
Plus, it’s a fabulous way to use up your overripe bananas!

Peanut Butter Banana Chai Drop Cookies

Feel free to use either smooth or chunky peanut butter for this recipe. Also, add or remove, mix & match warm, chai spices, as desired. Some great ideas, other than cinnamon, are nutmeg, cloves, cardamom and/or ginger.
Ingredients:
- 1 1/4 cups sugar
- 2/3 cup peanut butter – smooth or chunky
- 2 tbsp oil or butter – your choice: peanut oil, coconut oil, vegetable oil, tiger nut oil
- 1 tsp vanilla extract
- 2 bananas – ripe, mashed; about 1 cup
- 2 large eggs – beaten
- 2 1/4 cups flour
- 1/2 cup oatmeal
- 2 spicy chai tea bags – rip tea bags open & add contents, discard bags
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/2 tsp ground cinnamon
Instructions:
- In a medium-sized bowl, evenly combine flour, oatmeal, contents of chai tea bags, baking powder, baking soda, sea salt & ground cinnamon.
- Cream peanut butter & oil or butter with sugar, until lighter & fluffier. Add vanilla extract.
- Add eggs & beat well.
- Slowly, add flour mixture into wet mixture, to combine evenly.
- Chill cookie dough for 30 minutes, in refrigerator.
- Preheat oven to 400 degrees F.
- Using two teaspoons, drop cookie batter 1 heaping tsp at a time on greased, parchment lined cookie sheets, about 2 inches apart.
- Note: A non-stick silicone baking mat is perfect to use here, just be sure to turn the oven temperature down just under 400 degrees F.
- Tip: If desired, combine another 1/4 cup sugar with 1 tsp ground cinnamon & sprinkle on top of cookies, before baking.
- Bake for 8 – 10 minutes, or until golden brown.
- Let cool on baking sheets for 1 – 2 minutes, remove to a cooling rack to finish cooling.
