Ingredients:

  • 2 cups tiger nuts flour
  • 3/4 cup arrowroot flour
  • 3/4 tsp salt
  • 2 tsp baking powder
  • 1/6 cup tiger nuts oil
  • 1/6 cup coconut oil

Instructions:

  1. How to Bake Melt-in-Your-Mouth Gluten Free Tiger Nuts Crackers - cookingwithkimberly.comCombine dry ingredients to a food processor, or mix by hand thoroughly.
  2. Add wet ingredients to combined dry ingredients, in food processor & pulse to mix.
    • Note: The texture should be that of wet sand that can be squeezed for form a loose ball.
    • Note: If needed, pulse in 1 tbsp coconut oil, at a time, to achieve desired texture.
  3. Lightly flour work surface, and pull dough together, kneading until well combined.
  4. How to Bake Melt-in-Your-Mouth Gluten Free Tiger Nuts Crackers - cookingwithkimberly.comForm into a ball or flatten into a disc shape.
  5. Place dough in a bowl & cover with plastic wrap.
  6. Chill dough for 30 minutes up to overnight, before forming into crackers.
  7. Slice disc into equal-sized quarters. Then, slice each quarter into 3 equal pieces.
  8. Lightly flour work surface, and roll each piece into a ball.
  9. How to Bake Melt-in-Your-Mouth Gluten Free Tiger Nuts Crackers - cookingwithkimberly.comPlace balls into bowl, cover with plastic wrap & chill an additional 20-30 minutes.
  10. Lightly flour work surface, and slice each ball into 4 equal pieces, forming balls with each.
  11. Prepare two sheets of plastic to press dough between, when forming crackers. Lightly flour each piece of plastic, on flat sides facing each other.
  12. How to Bake Melt-in-Your-Mouth Gluten Free Tiger Nuts Crackers - cookingwithkimberly.comPlace balls of dough, at least 3 inches apart, between floured plastic sheets.
  13. Use a flat dish or baking pan, to press crackers to about 1/4 inch thickness.
  14. Preheat oven to 400 degrees F.
  15. Prepare baking sheets with parchment or baking mats.
  16. Gently, transfer pressed rounds to baking sheets, at least 1 inch apart.
  17. How to Bake Melt-in-Your-Mouth Gluten Free Tiger Nuts Crackers - cookingwithkimberly.comBake on 400 degrees F, for 8-10 minutes, or until golden brown around edges.
  18. Remove from oven & leave on baking sheets for 2-3 min, before gently moving to a cooling rack, to cool completely, before serving.
