When you want something a little bit naughty, but still want to serve something healthy, this is a great option, whether it’s a weeknight or a special get together.

Ingredients:
- 1 head romaine lettuce
- 1 lb extra lean ground beef
- 1 – 2 tsp peanut oil
- black pepper – to taste
- 1 tsp ancho chili powder
- few dashes chipotle chili powder
- pinch dried oregano
- 1 1/2 cups garbanzo beans
- 1 1/2 cups cheddar cheese – grated
- 1 1/2 cups tomato – sliced or diced
- 2 – 3 tbsp fresh cilantro – minced
- sprinkle red chili flakes – tossed with lettuce
- tortilla chips – taco shells or tostada shells
- hot sauce – to serve
- sour cream – to serve
- guacamole – to serve
- lime wedges – to serve
Instructions:
- Wash lettuce, dry with paper towels, remove from ribs & rip into bite-sized pieces.
- Preheat a large frying pan with oil, on medium heat.
- Brown ground beef, while stirring & breaking pieces apart with a spatula.
- Add spices to the beef, while browning, stirring to combine.
- Heat chips, tortilla shells or tostada shells in the oven on a low heat, while preparing salad.
- Toss lettuce with half of the minced cilantro, red chili flakes & black pepper – to taste.
- Arrange salad ingredients on lettuce, by scattering or sprinkling.
- Sprinkle top of salad with extra cilantro.
- Scatter browned meat on salad, or serve in a bowl in the center or alongside salad.
- Arrange warm tortilla chips, taco shells or tostada shells, around the edges of salad.
- Serve with sour cream, guacamole, hot sauce & lime wedges, as desired.
