Easy Tuna Rice Salad is a perfect, quick fix for lunch or dinner, both adults & kids will enjoy!

Neither rice or tuna needs to be boring. Add some tasty flavors that will kick them up, and you’ve got yourself a healthy, hearty & easy meal, on your hands.
Easy Tuna Rice Salad:
Make things easier & use rice that’s already cooked from leftovers the night before, or cook it up fresh – it’s up to you.
In this recipe, we’ve featured cabbage, but use what you have on hand & what you enjoy, whether that’s cucumber, celery, artichoke hearts, carrot – you get the idea!
Another unlikely addition, you may want to consider, is raisins. They add a nice sweetness & a roundness to the dish. Other dried fruits may work too – use what you enjoy.

Yield: 3 – 4 servings
Ingredients:
- 4 – 5 cups cooked rice – cooled
- 1 tin light flaked tuna
- 1/4 cup raw cabbage – finely shredded
- 2 tsp chopped green onions
- 1 tbsp mayonnaise
- 1/2 tsp mustard
- sprinkle of garlic powder
- sea salt & pepper – to taste
- 1 tbsp chopped parsley
- sprinkle of cayenne pepper
Instructions:
- In a large bowl, combine rice, tuna, mayo, mustard & green onions.
- Add sea salt, pepper, garlic powder, cayenne pepper & parsley.
- Stir in cabbage, until thoroughly combined.
This salad is a lovely spring-summer dish that is filling & delicious. The tuna can be substituted with crab or shrimp, if you so desire.
