Maybe you didn’t know you could make cookies with breadcrumbs, but they are an awesome alternative, when you may be out of other ingredients, you’d typically need for baking cookies.
The tropical flavors of coconut & plantain are just perfect in a cookie like this. Plus, you can utilize your sweet or plain breadcrumbs, you may need to use up.
These cookies are delightful & easy to make – and everyone will love how crunchy & flavorful they are!
Coconut Plantain Sweet Potato Breadcrumb Cookies:
For this recipe, I’m using breadcrumbs from my Roasted Sweet Potato Zwieback Buns.
If you don’t have sweet potato breadcrumbs, no problem, just use crumbs from another bread that is not savory in nature – i.e. without herbs, garlic, etc.

Bake Time: 15 – 20 minutes
Yield: 2 1/2 dozen cookies

Ingredients:
- 2 cups breadcrumbs – I used crumbs from Roasted Sweet Potato Zwieback Buns.
- 1 1/4 cups all-purpose flour
- 1/3 cup sweetened dessicated coconut
- 1/4 tsp salt
- 1 cup brown sugar – packed
- 2 tbsp chia seeds – optional; seeds of your choice
- 1 large egg
- 1 ripe plantain
- 1/2 cup milk
- 1 tsp vanilla extract
- 2/3 cup oil – options: peanut, vegetable, canola, coconut, sunflower

Instructions:
- Combine dry ingredients in a large mixing bowl. Whisk to evenly distribute ingredients.
- Preheat oven to 350 degrees F.
- Combine wet ingredients in a medium-sized mixing bowl.
- Quickly whisk egg, before adding to wet mixture.
- Add plantain, and quickly mash it into mixture.
- Mix wet ingredients, to combine evenly.
- Add 1/2 of the wet mixture into the dry mixture, and stir until just combined.
- Add remaining 1/2 of wet mixture to dry mixture, stirring to combine.
- Let cookie dough sit for 5 minutes, while preparing baking sheets, lined with parchment or silicone mats.
- Drop 1 heaping tbsp of cookie dough per cookie, onto baking sheets, a few inches apart.
- Bake for 15 – 20 minutes, or until golden brown & firm.
- After a few minutes, move cookies to a cooling rack.
It’s so easy to make these cookies, even when you are low on the typical ingredients for a cookie recipe, such as butter.
