Wild Blueberry & Clementine Parfaits are the perfect finish to a lovely meal.

Sweet, wild, Canadian blueberries, are matched with little, jewels of splendor – citrusy clementine sections, giving a gorgeous contrast of colors & complimentary flavors, nestled in layered clouds of cream. What could be more divine?

In this instance, it was a quick & beautiful dessert after a big seafood feast on New Year’s, but is equally as fitting for entertaining guests on a birthday, baby & bridal showers, Mardi Gras, Mother’s Day, Father’s Day, or any time you want something fast & delightful for a treat.

Wild Blueberry & Clementine Parfaits:

In this recipe, I used President’s Choice Frozen Wild Canadian Blueberries – they are tiny, in perfect shape, and little gems of deliciousness.

Type: Dessert Recipe

Prep Time: 15 minutes
Yield: 3 parfaits

Instructions:

  1. Using a hand mixer & mixing bowl, whip cream halfway, before adding icing sugar.
  2. Add icing sugar, 1 tbsp at a time, & finish whipping cream to stiff peaks.
    • Note: Taste test & adjust sweetness, as desired.
  3. Wash, peel & pull clementines into sections.
  4. Start assembling parfaits, by layering clementines & blueberries, separated by whipped cream.
  5. Finish with whipped cream on the top & push a few sections of clementine into the dollop, or sprinkle a few blueberries.
  6. Serve immediately.
