The roasted peppers with their heavenly, charred bits add a beautiful flavor layer, along with the sun-dried tomatoes, usually packed in oil.

Ingredients:
- 1 pound elbow macaroni – cooked & drained
- 1 large red pepper – roasted, cleaned off & cut into fine strips
- 1/4 cup sun-dried tomatoes – finely sliced
- 1/4 cup diced scallions
- 1/4 tsp salt
- 3/4 tsp black pepper – to taste
- 1 tbsp minced parsley
- 1/4 tsp cayenne pepper
Instructions:
- In a large bowl, combine macaroni, red pepper, sun-dried tomatoes, scallions, salt, black pepper, cayenne and parsley.
- Toss with creamy dressing.
- Refrigerate until ready to serve.

Ingredients:
- 1 cup mayonnaise
- 1/3 cup sour cream
- 1/4 cup heavy cream
- 1/2 tsp mustard
- 2 tsp white vinegar
