This delightful sauce is intensely flavored and suitable for use with Lemon Curd filled Jelly Rolls, Lemon Angel Pie, tartlets and other desserts.

The flavor of lemon curd is so much more than just lemon – I could eat it by the spoonful.

  1. In medium sized sauce pan, whisk together eggs, sugar, grated lemon zest until color lightens.
  2. Add in lemon juice and butter, and cook until butter melts.
  3. Keep whisking until mixture thickens. Allow to simmer for a few seconds.
  4. Remove from stove and strain mixture into a bowl, using a medium mesh seive.
  5. Stir in vanilla extract and allow to cool.
  6. Cover & refrigerate.
