Green beans with almonds is a very classic side dish, but many people are allergic to nuts, and have never been able to enjoy it.
Tiger nuts aren’t nuts at all – they are little tubers that grow under the ground, like potatoes or carrots do – making them perfect for those with nut allergies. Not only that, tiger nuts are full of vitamins & minerals, and are perfect for most diets & for those who have dietary restrictions.

Green Beans with Toasted Tiger Nuts:
In this recipe, I’ve used Whole Raw Premium Organic Tiger Nuts, smashing them with a mallet, to top this wonderful dish.
Not only will they lend a crunch to these beans, they will also adorn them with their flavor. To us, tiger nuts taste a bit like coconut, making them a very versatile flavor for sweet & savory dishes, alike!

After cooking the green beans, there are a few options for coating them – butter, coconut oil, or tiger nuts oil. I have used a combination of both tiger nuts oil & butter.
In this recipe, I’m using Raw Premium Organic Tiger Nuts First Press Extra Virgin Oil. This oil can be used for sweet & savory dishes, as well as for cosmetic purposes.

Ingredients:
- 3-4 handfuls green beans
- 1/8 cup tiger nuts – smashed & toasted
- 1 tbsp tiger nuts oil
- 1 tbsp butter
- black pepper – to taste
- sea salt – for boiling & to taste
Instructions:
- On the stove top, prepare a medium-sized sauce pan with water & salt, bringing up to a boil.
- Wash beans under cold water, sort & trim ends.
- Add beans to boiling water, and bring back up to a boil. Turn down to a simmer & let cook until knife tender.
- In the meantime, preheat oven to 400 degrees F.
- Smash tiger nuts in a resealable plastic bag, using a mallet & spread on a baking sheet, toasting in oven, until golden brown – about 5-7 minutes.
- Strain beans, once knife tender & return to pot.
- Add tiger nuts oil & butter, salt & pepper, and half the toasted tiger nuts.
- Put lid on the pot & gently shake to evenly coat beans.
- Put beans into a serving dish & top with remaining toasted tiger nuts.
- Serve warm.
Serve alongside any meaty entrée, for a great veggie side dish with flavor & pizzazz!
