Feast your eyes on this amazing Ontario Butternut Squash at Harvest Barn Country Markets that I picked up.

It is so perfectly formed, without blemish and you can tell it is fresh from the farm. The outside has good coloring, it’s smooth and the stem is still green, indicating how fresh it is.

We are very fond of butternut squash at our house and I know this one will be delicious.

Butternut squash can be roasted, baked, mashed, even use as a ravioli filling – there are many ways to prepare this squash.

We also like to toast the seeds – just toss them with a bit of olive oil, salt and roast in the oven for a short period of time until they are golden brown. They make a lovely, healthy snack.
