This is a great go-to recipe when you’re not sure what to make with dinner. Also, leftovers are amazing in the morning with eggs!

Cook Time: 20 – 25 min
Serves: 1 – 2 potatoes per serving, depending on size

  1. Preheat oven to 375 degrees F.
  2. Prepare potatoes by washing, peeling (if desired), and cutting into 2 inch chunks with a sharp knife.
  3. In a large bowl, toss potatoes with olive oil, salt, pepper, parsley & smoked paprika.
  4. Spread the potatoes evenly on a cookie sheet that’s been greased or sprayed.
  5. Roast in the oven about 20 min, or until golden brown and fork tender. Turn once.
  6. Adjust seasonings, if desired or necessary.

I just love these roasted smoked paprika potato bites…I may even have to make them tonight for dinner.
