At this time of year, the air is filled with the aromas of ripe, Niagara grown apples, that speak to you of delicious, hot cider, apple pies, as well as all the fantastic dishes you can prepare with these luscious globes of apple. The apples I have are super-fresh, crisp and sweet, with no bruising or damage, so I plan to be busy baking and cooking with them for the next few weeks.

Golden delicious apples keep well in a cool area like a fruit cellar, or a cool garage. A bushel will probably keep here for 6 – 8 weeks, and this is the best time to stock up, when they are at their peak.
