The roaster comes with a key chain that has the same kind of a hole in it as the roasting tray. When you are shopping, you can use that key chain hole to measure the sizes of the jalapeños to make sure they fit into the roasting pan.

Ingredients:
- 6 jalapeño peppers – washed, ends chopped off & seeds removed; using a peeler, peel the tips of the peppers very carefully
- 1 slice bacon
- cheddar cheese
- 1 fire roasted piquillo pepper – I used Royal Command Fire Roasted Piquillo Peppers; chopped into small pieces
- 2 tbsp Tex-Mex cheese or cheese of your choice
- sprinkle of sweet smoked paprika – I used La Chinata Sweet Smoked Paprika Powder.
Instructions:
- Preheat oven to 350 degrees F.
- Bring a medium-sized pot of water to a boil.
- Optional: Since the strong heat from jalapeños comes from the seeds and oils in the veins of the peppers, I will be plunging the jalapeños into the boiling water, to take them down a notch, so everyone can enjoy them.
- Spray baking sheet & roasting tray with non-stick spray.
- Plunge the peppers into the boiling water and bring water back up to a boil. Remove peppers immediately & drain.
- Place peppers into roasting tray holes.
- Crisp up 2 slices of bacon & chop into small pieces. They need to be small enough to fit into the small jalapeño peppers.
- Combine bacon & piquillo pepper pieces, Tex-Mex cheese & smoked paprika, and mix together well.
- Carefully, stuff each pepper with cheese filling, and place back into roasting tray.
- Place baking sheet holding the jalapeño peppers into a 350 degrees F oven for 12 minutes.
- Top up peppers with more cheese mixture, and return to oven for 2 – 3 minutes.
- Remove from oven & serve.
These beautiful peppers are delicious and worth the time it takes to prepare them.
