I am really excited to share this food product with you today, called PX Vinegar, which stands for Pedro Ximenez Vinegar.
Pedro Ximenez is a variety of grape, and comes from Spain. This vinegar is reminiscent of a balsamic vinegar in many ways, as it is dark in color. It is bitter, sour and sweet with finishing hints of fig, to my palate.
This particular vinegar is made in the Solara method, which is a complicated way of fermenting in barrels, replacing one barrel with a bit of another batch, etc…etc…that’s why we leave it to the professionals. LOL
Here’s what I say about PX Vinegar:
I’ve made some delicious PX Vinegar recipes, which were absolutely stellar.
There are many applications for this product, which gives it good “bang for the buck”. You can use it to marinate, for vinaigrettes, as a reduction for a syrup for fresh fruit or ice cream, as well as a beautiful finishing splash on soups and stews.
This vinegar is available at Qualifirst Foods, which is where I ordered it online, as my grocer did not carry it.
