Web Chef Review: Ontario Blue Potatoes at Harvest Barn Country Markets - cookingwithkimberly.comAlthough I have never used blue potatoes, I made a point of getting them at my Harvest Barn Country Market in Niagara-on-the-Lake.

I’m excited about using these blue potatoes – perhaps for a potato salad of some kind.

They are purplish blue on the outside and the inside is also a gorgeous blue color. I understand that when you cook them, they retain that pretty blue color. I think they will look quite beautiful in a salad or cooked and placed alongside other vegetables and a meat entrée.

These potatoes contain zero cholesterol, are high in potassium and contain some iron, are good for the digestive system, are good for your muscles and are high in antioxidants.

I must say, Harvest Barn Country Markets do a good job of offering produce that has been grown within a 100 mile radius of their locations, as much as possible.

Reducing our carbon footprint is very important to me, and I am always happy to see people supporting local farmers and businesses. Even if each of us makes an effort, no matter how small to keep our planet healthy, it can only benefit us and our future generations. As I have said before, if each of does a little something in this regard, it’s better than doing a lot of nothing!
