Niagara Cuisine Verjus is a delightful product I got from Harvest Barn Country Markets that is sure to spread as all the rage in the foodie community.
I am so glad I have been introduced to this extraordinary flavor booster.
Although, looking at the bottle, it would appear to be wine, it is not wine and contains no alcohol. It is made from the juice of the pinot noir grape with no sugar added, giving it a tangy, sourish flavor.

Although Verjus can be a replacement for lemon juice, it tastes of grapes. I use it in place of lemon juice. Verjus is quite an elegant way to flavor your food in a most pleasant, delicious, and unusual way. I even enjoy the taste of Verjus, straight from the bottle – all tangy, grapey and fresh.
Verjus is very versatile and can be a substitute for the acid in salad dressings, in place of lemon juice or vinegar, and can be used for finishing dishes and dips, drizzled over desserts and fruit compotes or to add some zip to a variety of beverages.
Deglazing your saute pans with Verjus adds a very bright pop of flavor to your sauces and gravies. The more I use this gorgeous Verjus, the more ways I have found to take advantage of this flavor enhancer. Very shortly, I am even planning on making a Verjus jelly, which will be fabulous.
