Ever used Certo Pectin Crystals?
Pectin is a natural substance found in the flesh, seeds and skin of fruits, and it reacts with acid and sugar to form a thick jell.
Fruits are rated as having high or low pectin content. This rating is crucial for the success of jellies, jellied fruit sauces and marmalades.
Natural pectin is not constant in its natural state in fruits, and I don’t like the idea of having my batches of jams and jellies fail, and so I have come to rely on using a sure thing – a product called Certo. There are other brand names for pectin, but this one is my particular choice.
