Peanut Butter Snowballs are a tradition for the Holidays, in our family.
My grandmother used to make these gems every Christmas, and we hadn’t been able to find her recipe for the past 15 yrs. However, I got a hint about what was in it, I experimented and here it is!
Now, it is a staple for our Christmas treats spread, again.
Peanut Butter Snowballs:
These little snowballs can run on the sweeter side of things, so using unsweetened versions of peanut butter, as well as shredded coconut, works out better.
However, feel free to use what you have on hand – they will be delightful, regardless!
Serve with: Christmas cheer!
Prep Time: ~ 1 hr total
Yield: ~ 120 snowballs

Instructions:
- On low heat, melt butter & peanut butter, to a consistent texture.
- Add sifted powdered sugar (2 1/2 cups worth before sifting), and continue to stir on low heat, until it is even in consistency.
- In a large mixing bowl, combine peanut butter mixture and puffed rice cereal, trying not to crush them completely.
- Roll into 1″ balls while mixture is still warm, and roll in coconut. Set aside on a cookie sheet.
- Allow to cool.
