One Month Grocery Shopping Strike: Day 7

Freezer - CookingWithKimberly.comThis is Day Seven of our One Month Grocery Shopping Strike!

I did a lot of writing today and “forgot” to eat breakfast…

For lunch, I had a quick can of Chunky Soup – New England Clam Chowder and doctored it up with cayenne pepper & dill.

For dinner, I am making Spicy Thai Ginger Coconut Chicken Soup – so amazing.

I added some edamame for some protein, variety & color, as well as a can of bamboo shoots from the pantry.

Of course, the coconut milk, and our broth today, came from the pantry.

We had limes, onions and mushrooms in the refrigerator, and chicken breasts in the freezer.

Everyone is happy, satisfied & smiling after dinner…The chicken was perfectly poached in the coconut milk & broth. Yum!

We got our beer for tomorrow’s SuperBowl today – Dos Equis & a Honey Brown Sleeman.

Mom made her ginger syrup for beer, if we want it, and a great side effect is that we have candied ginger afterward too!
