  1. Prepare 2 medium sized cucumbers by peeling and cutting them into bite-sized chunks. Place into an appropriate serving bowl.
  2. Peel & using a sharp knife, cut mango into bite-sized chunks and add to bowl.
  3. Add juice of half a fresh lime.
  4. On top of the salad, grind cracked pepper and salt, to taste.
  5. Drizzle a small amount of good quality extra virgin olive oil over top of salad.
  6. Sprinkle a few chili flakes on top.
  7. Gently combine all ingredients with hands or a salad spoon.
