How to Cook a Pork Loin Roast in the Oven - CookingWithKimberly.comI was so very excited to roast a pork loin the other night…

…I had accidentally found a bottle of this righteous Bar-B-Que Rub Seasoning I brought home with me from Dallas when I lived there from a BBQ Restaurant in Dallas.  It’s from Baker’s Ribs, a small franchise chain in the Southern United StatesUse the link for more blog posts from me on Baker’s Ribs on CookingWithKimberly.com.

It’s called Bakers’ Ribs Bar-B-Que Rub.

Of course, you don’t have to use Baker’s Ribs seasoning for this recipe…Simply, use your favorite or available BBQ Rub or BBQ Seasoning you prefer.  Perfect!

Don’t be afraid of roasts & larger pieces of meat. They seem tough to deal with, but will give you more free time while cooking than other labor intensive dishes.

Easy to make, and done relatively quickly, you’ll be glad you learned How to Cook a Pork Roast!

Prep Time: 8 min
Cook Time: ~ approximately 1 hour
Rest Time: 8 mins
Yield: 4 servings

The ingredients & instructions are listed below the video for measurements & directions. Please enjoy the video below.

Ingredients:

  • 1 pork loin roast
  • 1 1/2 tbsp olive oil
  • 1 1/2 tbsp Baker’s Ribs Bar-B-Que Rub – or comparable BBQ rub or seasoning you prefer.
  • freshly cracked black pepper – to taste
  • sea salt – to taste

Instructions:

  1. Pre-heat oven to 375 degrees.
  2. Cut slits in fat on upper side of meet, almost to the meat, but not all the way through, about 1.0″ apart.
  3. Generously coat roast with olive oil, sea salt, freshly cracked black pepper and BBQ rub or seasoning.
  4. Place into baking pan with meat thermometer fixed into centre of roast with fat side up.
  5. Roast in oven until internal temperature reaches 160-165 degrees, and it’s golden brown on the top.  You may then take the roast out, cover it with a roast tent loosely to allow it to finish cooking and resting for approximately 8 mins.

* Tip: If your roast isn’t browned enough on the top, but it’s finished, simply place it under the broiler on the Hi setting for 2-3 minutes, watching it carefully that it doesn’t burn.

You will have some beautiful cooking juices that you can use to baste the meat during the roasting process or to douse your rice or potatoes on the side. Yum!

This roast took approximately 1 hour to be done! 😉
