Since this corn was purchased in May, before the corn season here begins, I am cooking it for 10 minutes. When I cook the corn from my own kitchen garden, I reduce cooking time.

I try my best to purchase locally grown corn, whenever it is available. Check out my review on Ontario Corn-on-the-Cob at Harvest Barn Country Markets:

It is vitally important not to water log the corn by overcooking, or by leaving it in the water once it is cooked. For about 3 or 4 servings, a dutch oven filled 3/4 of the way with water is pretty well ample. If you are cooking more corn on the cob, a large stock pot filled 3/4 full might be a better choice for you.
