How to Make a Different Kind of Chicken Salad Sandwich

Prep Time: 10 min
Yield: Enough for 4 sandwiches on bagels.

Nutrition Facts:
If you’re looking for a healthier version, use low-fat mayonnaise.

Ingredients:

  • 4 cups chicken – cooked meat
  • 1 1/2 tbsp mayonnaise
  • 2 tbsp plain yogurt – I prefer Balkan style.
  • 1 stalk celery – very finely chopped
  • 1/2 tsp black sesame seeds – * optional
  • 1/2 tsp flax seeds – * optional
  • ~ 1/4 tsp freshly cracked black pepper – to taste

Instructions:

  1. Break chicken into small, bite-sized pieces, but not shredded.
  2. Finely dice celery stalk by cutting lengthwise into 4, then slicing finely.
  3. Add celery, yogurt, mayonnaise, pepper, and seeds.
  4. Mix until chicken is evenly coated with mayonnaise and yogurt. * Tip: I prefer to eat my chicken salad on poppy seed bagels.

This is also a great way to use up leftover turkey from the Holidays!
