How to BBQ Texas Tailgating Beer Can Chicken
I love tailgating! My husband is from Texas…You know, the home of “Friday Night Lights“! Football is life in the great state of Texas, and you can guarantee to see us at at least 1 game every weekend…It is a real celebration…so why not tailgate?
Tailgating is a great time for sports fans, and not-so-much sports fans alike to enjoy the game and each other!
This is the ultimate in tailgating recipes! I love this neat one, and it is such a conversation piece to boot. Fun, and easy to make with low maintenance on the BBQ… ~ Kimberly Edwards 😀

Serve With: Tailgating appetizers and hors d’oeuvres
Prep Time: 10
Cook Time: ~ 1 – 1.5 hrs (depending on size of chicken, and temperature of your BBQ)
Yield: 1 whole chicken

Ingredients:
Instructions:
1. Rinse whole, defrosted chicken under cold water, inside and out. Pat dry with paper towel.
2. When skin is dried off, rub the skin with butter and cover thoroughly. If there is left over butter, cover inside of cavity.
3. Evenly coat chicken with garlic powder, poultry seasoning, onion powder, sea salt, freshly cracked pepper, chili powder and paprika.
4. Open can of beer, and drink a few sips or pour a bit out in order to make room for some ingredients.
5. Put into beer: sprig of rosemary, bay leaf, peppercorns, and 1 clove of garlic cloves sliced into 2, and citrus wedges (squeeze juice into beer first, then add peel as well).
6. Turn on bbq to about medium heat and close to preheat.
7. In a small baking pan, place beer can in middle. Slide chicken onto the beer can so it is standing up.
8. Put pan with chicken into the bbq in the center and close lid. Turn bbq down to lowest heat.
* Tip: If you have a temperature gauge on your bbq, it should be around 325 F.
9. Chicken will take approximately 1.5-2 hrs to bake. Chicken must be at least 190 F to be done. Check it regularly to make sure it is not burning and flames aren’t out of control.
* Tip: If flames are high and burning the chicken, take a spray bottle and spray the flames back with water. Check regularly if your bbq is prone to this.
10. When chicken is completely done, allow to sit outside of bbq for at least 5 min to rest.
11. Remove chicken off of beer can, slice and enjoy!
