National Cheesecake Day Rocked!

I Love CheesecakeKenney and I made it out to The Cheesecake Factory in Dallas off Northwest Highway to celebrate National Cheesecake Day.

It was amazing!

Not only was the cheesecake really delicious, but the slices were 1/2 off on July 30th.

What Kind of Cheesecake Did We Eat?
It was a tough choice for us…there are so many amazing flavors they have there.

What…with the Red Velvet Cake Cheesecake that looked awesome and had great reviews…Plus, for every slice sold, The Cheesecake Factory donates 25 cents to Feed the Hungry in the USA.

Okay…no more suspense…Kenney had the Banana Cream Cheesecake complete with fresh bananas and Bavarian cream custard all topped with fluffy whipped cream.

Bar Stools are So Stylish in a Kitchen

As many of you may know, we buy “ugly” homes, fix them up and make them beautiful so we can sell them.

Whenever we start on a new project, I’m in charge of organizing and opening up the kitchens!

Firstly, I knock all isolating walls down – walls that “isolate” the chefs from the rest of the home and activity.

This way, it brings the family or friends when entertaining together.

barstoolsMy new addition is to make a bar that separates the kitchen from the lounging or seating area that’s far enough away from the real action in the kitchen – because, as a person that loves to cook, I don’t like too many people in the kitchen or people “in the way” when I’m cooking, preparing or cleaning up.

However, I do enjoy the fellowship from a good distance when entertaining – it can be a lot of fun.

This way, your guests or family can sit on their Bar Stools enjoying some glasses of wine or amazing appetizers or hors d’oeuvres you made!

For me, this works fabulously. So, when designing the new and improved kitchens, I always have a beautiful bar with a granite countertop or something equally as beautiful and make it a focal piece and a place where people can visit and have fun.

I design the bars and the kitchens to be functional, not just for show!

Woodchuck Pear Cider Review

pearsI had Woodchuck Pear Cider for the first time last night at the Fox & Hound Pub & Grille in Dallas, Texas.

My husband told me about it and we had it draft-style.

I mean WOW!!! That is one of the tastiest beverages I’ve ever had!

It’s alcoholic, yes, but is really not overbearing, and no, it doesn’t taste like beer at all, even though it’s draft.

Woodchuck is made in Vermont the “old-school” way – this was a down-home family business that took off because of it’s deliciousness!

I just found the Offeretti Coupon Search Engine today and tried it out.

It’s a great site where you can look up coupons or deal for just about anything near you – not just restaurants…LOL…but you know I’m a foodie.

So, a few friends have been wanting to hang out with us and we decided that maybe we’ll go to Dave & Buster’s for some fun together.

I looked up our city – Dallas, Texas and our zip code and all of the coupon deals for restaurants popped up – and yes, it had Dave & Buster’s on there!

It popped up with about 3 coupons we could use for our night out! How cool is that.

Oh yeah, and you can connect it with your Facebook account too!

1. Angel Food Cake – My mom’s is thee BEST!

2. Dirt Cake – which is really more like an oreo custard pudding.

Dr. Oetker Makes Baking Even Easier

I’m  not sure about you and your experience with Dr. Oetker baking mixes…but I recently just tried my very first lava cake from Dr. Oetker! Um…yeah…soooo delicious!

It was super easy – much easier than I had anticipated, that’s for certain.

Okay, so Dr. Oetker has now made baking even easier with their Shaker mixes. All you have to do is add milk or water, shake it up in the container they provide you with and then, pour it into the baking pan, muffin tins, waffle iron or whatever you have planned for your mix!

Not only is it fun, especially for kids, but it’s fast, easy, you don’t really need any ingredients – you can simply use water.

What’s great, though, is that you can still customize your shaker mix! “How?”, you ask…

Well, try adding chocolate chips to your fabulous Banana Bran Muffins Shaker! How about blackberries or pecans to your buttermilk pancakes – or go ahead and use that same mix in the waffle iron for unbelievable waffles!

The possibilities of additions, as you know, are endless…

Cooking Tips for College Students on a Budget

My husband and I were students in University when we met and got married in college.

So, we definitely know how to stretch a dollar when you’re going to school and don’t have a large budget to work with. Plus, we know your meals need to be quick and easy, as you really don’t have a lot of time for anything extra when going to university!

No doubt, if you’ve been to college or university, you’ll know exactly what I mean – If you’re on your way to college in the fall, be prepared and know your options ahead of time.

Firstly, find out if your dormitory allows you to have any kind of cooking appliance, such as a microwave, toaster, single burner or slow cooker. Also, find out if you’re allowed to have a small fridge in your room.

* Tip: Some dorms have a community kitchen of sorts where there will be a stove or burners, a toaster and fridge, etc. that you have access to use.

Secondly, whatever they allow you to have, check out Sears CampusReady on Facebook and try out the Gift Getter function.

This will allow you to “Get the perfect gifts for college and let your friends and family pay”. How cool is that?

The key here, people, is to get things you need – like a bar fridge, toaster, kettle, etc…not just cool posters and good looking duds to wear to the campus pub! LOL

What else is fabulous is that Sears offers Reloadable Gift Cards that you and your parents both get. That way your parents can “reload” them in a Sears or Kmart personally or go online to reload, so that you can get to the local Sears or Kmart near your school and get your supplies you need – since you’re going to be such responsible students hitting the books, right?

3 Budget College Foods
1. Ramen Noodles: Yes, they will sustain you, they’re super duper cheap, tasty and can be stored for a long period of time. All you need is hot water – meaning, you can heat water in a microwave or boil it on a stove or use an electric kettle. Simple, quick and easy.

* Tip: Try cutting up some green onion/chives or mushrooms finely and add to your cup before adding the water – It will spice things up a bit for you. You could even try 2-3 shrimp chopped, as they cook extremely quickly and you could pick a few up at the fish counter of your grocery store for a very low price!

2. Rice & Beans: These 2 items are extremely inexpensive and together, are very nourishing! They form a complete protein, as so many vegetarians and vegans know…Add some creative seasonings, mix the 2 together or eat separately! Add some veggies to beans and water in a slow cooker before leaving for class, boil up some 5 minute rice or add it to the slow cooker when you get back and you’ll have a complete, hearty meal that was really cheap.

* Tip: If you get yourself a small refrigerator for your dorm room, like a bar fridge, you can store your leftovers, as well as some easy “fixins” like sour cream for a slow cooker chili or butter and jam for your toast in the morning. All very cheap and will make your cooking “repertoire” more exciting!

3. Instant Oatmeal, Grits or Cream of Wheat: Just add boiling water baby! All healthy, stick-to-your-bones types of breakfasts available in instant varieties so you simply have to find a way to boil water – microwave, electric kettle or a stove.

Nakano Rice Vinegar Salmon Salad Recipe

That’s right…

It’s made from real rice and has a fabulous flavor, and has so many different uses in so many dishes I make.

Salmonsalad

Take this Salmon Salad for instance…

Salmon Salad with Tomatoes, Capers and Dill Vinaigrette

2/3 cup NAKANO Seasoned Rice Vinegar Roasted Garlic or use the “Original”
2 cloves crushed garlic
1 1/2 tsp dried dill weed – Divided
1 tsp salt
4 salmon fillets ~ 5 ounces e/
3 tbsp extra virgin olive oil
16 asparagus spears
2 medium tomatoes – Diced
1 tbsp capers
Hearts of Romaine lettuce

1. In a bowl, combine the rice vinegar, garlic, salt and 1 tsp dill to make a dill vinaigrette. Stir well.

2. Place salmon fillets in a shallow container, like a tupperware (as long as it’s non-metallic).

3. Add 4 tbsp dill vinaigrette and marinate for 30-60 minutes.

4. Drain salmon and discard of marinade.

5. Grill or sauté salmon, starting with the skin-side down, until cooked as desired ~ 3-4 min each side. Set aside.

6. Add olive oil to remaining vinaigrette. Blanch the washed and prepared asparagus and place in a shallow, rimmed dish. Drizzle 3 tablespoons of the vinaigrette over top of the asparagus.

7. Combine tomatoes, capers, 2 tbsp vinaigrette and remaining 1/2 tsp dill weed.

8. Arrange washed and torn romaine lettuce and 4 asparagus spears on each serving plate.

9. Remove skin from the salmon and place one fillet on each plate.

10. Add a generous amount of tomato mixture over salmon, lettuce and asparagus. Serve with remaining dill vinaigrette, as desired.

This recipe will Serve 4.

Salmon may be served hot or at room temperature.
