Fresh Additions to that Carrot Muffin Mix

Yes, I must admit, that sometimes, I use mixes for speed, or simply because I just don’t feel like making something from scratch…Don’t act like you don’t!
However, one thing I ALWAYS do is doctor it up somehow to make it better and/or to make it my own.
Today, I was craving carrot muffins, and had a few good additions that I thought I’d share with you…
I have been on a flax and sesame seed, especially black sesame seeds, kick…So, I added 2 tsp of flax seeds to a recipe for 12 large muffins.
I also love raisins in my carrot muffins, not only for a little sweetness, but just because I love raisins, but I seem to gravitate towards golden raisins most of the time.
Then, I got a little bit ambitious and wanted to add some more grated carrot (~ 1/4 cup). At this point I laughed and thought to myself that I should have just made them from scratch.

Savory Mole Breakfast Bread Pudding (Mole Man-Quiche)
Absolutely delicious and totally different for breakfast or Sunday brunch with a Tex-Mex spin. I call it ‘Man-Quiche’ because it is more manly than a quiche is and more filling too…A great way to use your Mole Bread up, or any type of bread for that matter. ~ Kimberly Edwards

The Best Chai Tea Lattes in Niagara Falls, Canada

I was a Starbuck’s freak last year until about a few months ago, when I was getting a little tired of my usual Chai Tea Latte…I think I overdrank them!

So, I started drinking the White Chocolate Mocha, and got sick of that even quicker…
Then into the Passion Tea Lemonade…I only had that a few times and gave up…
I went out for a tea with an old friend last week and happened upon an amazing Chai Tea Latte, which I was very leery about even trying, as I had lost my umph!

Kimberly’s Mole Bread for the Bread Machine
I love Mexican food, especially mole…So, I thought, why not make mole bread? Mole is pronounced “mow-lay”. Very cool!!!

Evolution of the Seafood Pick

To many people, this may sound a frivolous subject…However, to us seafood connoisseurs, this is crucial!
My favorite food in the entire world is lobster, and my favorite way to eat it is whole and steamed…
Many of you will say, “Wow, that’s a lot of work!” If you say that, you’re not crazy about lobster like I am…It is well worth the toil of cracking through all the meat to find that priceless sweet lobster meat! Uhhh!
Anyways, I could on for days about how amazing that is…Maybe you’re crazy about crab…LOL
My Point:
The best tools we had to help us get the meat out of the shells were those old nut crackers you have stashed away in your drawer from Christmas, and little forks with long tongs on them.
When I went away to our cottage, which actually does not constitute roughing it…LOL…I decided to run up to the local grocery store and treat myself to a whole lobster one night. Problem was, I was up at the cottage with no tools…not even a little hammer, so I searched the kitchen aisle at the store and made a REAL DISCOVERY.
I have been suffering for the past years with those old, tired alternatives for picking meat out of the lobster, when they have the neatest little Seafood Picks now…Not only do the have a tiny fork on the end, traditionally, but the other end had the neatest little “scoops” that actually even fit into the tiny legs of the lobster.
Rocket science, I know…LOL…It doesn’t take much to excite me in the kitchen…LOL
I am so happy I found these little gems and had to put you on alert to add them to your kitchen, if you are like me and were not updated on this new discovery…LOL
Needless to say, I had a smile from ear to ear, like the Cheshire Cat, as I ate my lobster as slowly as I possibly could, fully enjoying every single tidbit I “scooped” out! Pretty darn proud of myself that day…LOL!

Back From Vacation…Back To The Kitchen Tomorrow!
