Raw Oysters on the Half-Shell – Have You Tried One?

When I was young, and up to this day, my mother would always put out smoked oysters on special days where we ate beautiful hors d’oeuvres. I was so young that I don’t even think I really knew what they were…They were just delicious, little, smoky, brown “things”…
Now, the first time I ever remember fresh, raw oysters was when I was about 7 yrs old, and my parents and I went on vacation to Fort Meyers, Florida. There was a little place at the end of a wharf on the ocean where they ordered buckets of freshly caught, boiled crab legs, and plates and plates of raw, Gulf oysters. I wasn’t too sure what to think of the raw, slimy-looking gems my parents were devouring by the plateful, but I did try one…with lemon squeezed on top of it…They were just “okay”, so I stuck with the crab legs.
Now that I am “all-grown up”, I thoroughly enjoy the experience of eating freshly shucked, raw oysters on the half-shell! Yum! Plus, you “kinda feel like a rebel” eating raw oysters…LOL…Smoked oysters are still a favorite in our household, and are Always served on New Year’s for certain!
Today, raw oysters are safer to eat than ever! About 10% of the U.S. market’s oysters go under strict post-harvest processing to allow you to eat the oyster raw, but with added safety…This 10% will gradually increase to include more oysters being processed for safety.
Techniques of freezing (IQF), heat-cool pasteurization (HCP), and high-hydrostatic processing (HHP) all allow “at risk” consumers to enjoy oysters with a reduced risk of Vibrio vulnificus illness.
All-in-all, I take most opportunities to eat raw oysters on the 1/2 shell! Don’t knock it until you try it! They’re great with lemon squeezed on top, or the Louisiana way…Hot Sauce!!! Delicious!

Will the “Rescue Chef” Shine on the Food Network?
I am excited to see this new show, “Rescue Chef”, premiere on the Food Network in just a few days – Mar. 1st, 2008 @ 12 pm EST.
Danny Boome, a prominent, young English chef, helps out American families and saves their dinners from disaster! As most reality cooking shows, it will be full of humor and excitement!
He will travel all over the United States saving the meal from the garbage disposal by helping people recreate favorite meals, and infusing new and interesting ingredients and ideas to “spice” it all up and rescue dinner.
I wanted to ensure that all of my readers were in the know about the newest reality cooking show! I’ll definitely be checking out this fun, new Food TV show this Saturday…

Some Irish Recipes to Celebrate St. Patrick’s Day by Niall Cinneide
St. Patrick’s Day is March 17th, and it is a “day for wearing green” and other Irish traditions. Even though the patron saint St. Patrick was not born in Ireland, everything that is Green (which symbolizes spring and the prospering of the crops), fun and Irish can be worn or used to celebrate this holiday. And it is a holiday for all ages. Here are some entertaining ideas to use on St. Patrick’s Day.
A few drops of green food coloring goes into anything you might want green, even a mug of draft beer. Anything made with Irish cream or Irish whiskey has the Irish spirit, too.
Authentic Corned beef and cabbage
Corned beef brisket, about 4 lbs.
1 juice orange
18-20 whole cloves
1 tsp. whole yellow mustard seeds
1/2 tsp. caraway seeds
1/2 tsp. whole black peppercorns
1/2 tsp. whole coriander
Put corned beef brisket into large pot for cooking. Take cloves and insert them, then sprinkle remaining spices on. Cover brisket with water, bring to boil, then simmer for 3 hours or until tender.
3 lbs. small potatoes, peeled
2 1/2 lbs. carrots, peeled and cut into large pieces
1 medium head cabbage
About 40 minutes before beef is finished, boil a large pot of water and cook potatoes and carrots. Add cabbage about 10 minutes before you’re ready to serve as it doesn’t need to cook long. Drain vegetables.
Arrange meat and vegetables on a platter and serve with your favorite mustards.

What is a Biodynamic Wine? by Ben W
First of all, we need to explain what a biodynamic wine. A biodynamic wine is a wine made from grapes grown biodynamically.
Biodynamic Vineyards have the same as organic vineyards – to produce grapes from which to make wine profitably without using synthetic additives. The only difference between organic and biodynamic vineyards is that on biodynamic ones the work in the vineyard is timed to coincide with the Earth’s natural rythms so that the vine is receptive to what the winegrower is asking to do. These natural rhythms are determined by the position of the moon, the sun and the planets as well as the earth. So whereas Organic farmers concern themselves predominantly with the soil – in other words what’s going on beneath their feet – Biodynamists also concern themselves with what’s going on above their heads.
Biodynamic growers feel that the influence the movement of celestial bodies relative to each other and to the Earth have a significant influence on how plants grow. This is not new. For instance, Hesiod when writing in the eighth century BC stipulated that wine be made according to a sign from the sky:
