Enjoy The Sunset of Summer With A Healthy Barbecue Or Picnic

img_1204.jpgSummer is coming to a close…It is truly the Sunset of Summer…Don’t you want to enjoy the last bit of summer barbecuing out on your deck or picnicking in the park with family and friends? Well, I certainly do, and I intend to.

If you’re anything like me, you are trying to soak up every last ray of sunshine of the summer. I am even working outside, instead of at our kitchen table. I am not a huge fan of winter, except for the wonderful food we make! I will enjoy the Indian Summer!

new-pics-040.jpgIn fact, last week, we enjoyed everyday outside on the deck of our cottage! What a de-stresser. Not only did we eat deliciously, but we enjoyed each other, and the sunshine! (Yup, that’s me in the photo, enjoying every minute of it!)

Grape Season Means Making Wine At Home

grapes.JPGIt is Grape Season!!! One of my very favorite times of year. Why? Because we make wine at home!

My parents have made wine at home for many many years…As long as I can remember, actually.

Every grape season, we choose what kind of grapes we want to use, and order them early from a local grower. We usually make our wine with concord, Agawam, and Niagara grape varieties. We pick up about 4 bushels of grapes, and use the grapes we grow in our garden…And it is a family affair.

We all get together to wash and “process” the grapes. Meaning we pick each and every grape off of the stems.

Then, the boys take it away – well, into the garage – to juice the grapes through a grape/wine press into a huge Rubbermaid-type pail/trash bin with a spout at the bottom.

The boys then drain the juice from the bin into boiling water sterilized demijohns.

A simple syrup made from 1/2 water, 1/2 sugar (~1 bag) boiled until the sugar is dissolved, is added to the juice, since we love sweet wine that tastes something like Port or Sherry.

We use a simple syrup because if you add pure sugar, it may not completely dissolve in the juice, and will sit at the bottom. Your wine will get sweeter and sweeter as you get to the bottom, probably to the point where it is no longer even enjoyable. So, please use a simple syrup.

Kimberly’s Aloequila

aloebarbadensisplant.JPGI just love aloe vera. What an awesome plant. It can heal your wounds and sunburns, tastes wonderful, and is used for many other medicinal purposes. Now, let’s cook…well, mix it up!

“The lower leaf of the [aloe vera] plant is used for medicinal purpose. If the lower leaf is sliced open, the gel obtained can be applied on the affected area of the skin. Leaves and seeds are the two edible parts of Aloe Vera” (http://en.wikipedia.org/wiki/Aloe_vera, 2007).

Looking for another “festive” tropical-type alcoholic beverage to replace the usual margarita? I’ve got it just for you! I created it tonight, and it is my new favorite thing!

Perfect Peaches

peaches.JPGSince we made Ice Cream yesterday, I thought we should talk about peaches today, since they go sooooo well on top of Ice Cream…what’s better than peaches n’ cream? Also, they are wonderfully in season right now!

Being from Ontario, I am especially partial to our local peaches. They are some of the best in the WORLD!

My Story:
My mother’s side of the family immigrated from Russia to Vineland, Ontario, and then ended up settling in Niagara-On-The-Lake, Ontario, Canada. My mother is youngest of 9 children, and I am the youngest of 27 grandchildren, all of whom had to, at one time or another, work on the farm. Now, I love cherries, pears, and apples, but I loved it when peach season hit! Not only was it easier to fill a basket worth, but at anytime, you could take a break and enjoy a luscious peach! Wow!!!

How To Make Your Own 100 Bottles Of Beer On The Wall

16thcenturybrewer.JPGEver wonder how they make beer? Well, I did…I was just thinking about it today, in fact. I have been trying some great microbrews in Ontario this year, and some great imported beer.

My latest find is an Argentinian beer called “Patagonia”. On the back of the bottle, it says it is made with water, hops and malt. (I knew it would say that)

…But, then I was thinking…I bet I could make some seriously tasty beer myself! So, I looked it up, and wanted to share it with you. I truly hope you enjoy this information, and let me know how awesome your 100 bottles of beer are!

Rada Knives Rock!

Can I say Wow or what?

I have never even heard of these knives before this week. We were “Up North” in Ontario at our cottage, and we went to the flea market they hold on Sundays in Grand Bend. We came across this random vendor, who had a booth of all sorts of miscellaneous things. I spotted these knives he had called Rada Cutlery.

What caught my eye was the aesthetics of it. I love things, where the entire piece is the same color…It just looks clean and streamlined. Even the chef’s knife was lightweight, although I do still love heavyweight chef’s knives…But, let’s face it: Many people are intimidated or even scared of a heavy chef’s knife. I know many feel they have more control over a lighter weighted knife.

Now, he had a peeling paring knife, granny paring knife, chef’s knife and a tomato slicer. We purchased the chef’s knife and a peeling paring knife, just in the hopes that they would be useful. They blade is stainless steel and the handle is made out of aluminum.

The casing says it is made from high carbon stainless steel, and it is made in the USA.

That afternoon, we had a chance to use these beauties. I grabbed the peeling paring knife to cut the top out of a tomato, then proceeded to cut the tomato into slices with the chef’s knife. It cut like it was a Read more

Creamy Malibu Coconut Dipping Sauce

So…We are at the cottage and about to heat some breaded coconut shrimp in the oven…Yes, I like convenience sometimes too…and they usually come with a great Pina Colada-type dipping sauce (although there is never enough of it to go around). However…this package we had doesn’t have a sauce.

Well, go classic cocktail sauce…nope, no horseradish @ the cottage… So…I came up with this great recipe, and it was just what we wanted (and had the ingredients for)! ~ Kimberly Edwards

Veggie Chili Challenge

When you don’t have a lot in your pantry, except some cans of veggies, a bag of beans, and herbs and spices, anyone would tell you to go shopping…But…The creative cook will always make something out of “nothing”.

I was asked by an acquaintance, if I only have in my pantry:
1 can of organic stewed tomatoes
1 yam
1 can of chickpeas
1 bag of split mung beans
1/2 an onion
some celery
brown rice
olive oil
herbs and spices

…and I didn’t want to go shopping, what could I make? Make a vegetarian chili! ~ Kimberly Edwards
