Nicoise is just a combination of greens, tuna, green beans, new potatoes, tomatoes, black olives and eggs – traditionally. That’s all it means…

Serve With: Salad,on baked potatoes or as a dip – Perfect for Niçoise Salad

This soup is perfect to impress your tastebuds and your family! There never seems to be enough leftover becuase you’ll be left wanting more.

This delicious and creamy soup has a splash of red wine and is so indulgent, it seems sinful, but it’s actually good for you.

Kenney, my husband, actually customized this soup recipe from a similar recipe in The Maker’s Diet for me because my favorite everyday food to eat is cream of mushroom soup.  This is a step up to a gourmet treat!

Serve With: Dollop of creme fraiche or sour cream
Prep Time: 18 min
Cook Time: 20 min
Yield: 4 – 6 servings

Ingredients:
2 lbs Mushrooms – whatever varieties you desire – include enoki, shiitake, portabello, oyster, king oyster, crimini, button mushrooms, but you may also use dried mushrooms if you like.
2 cups Onions – Diced
5 cups Chicken Broth – We use reduced sodium broth or make our own.
3/4 cup Kefir
1 1/4 cup Fortified Wine – Like Port or Sherry
1/4 tsp Cayenne Pepper

Mushroom Week on Cooking with Kimberly!

Cultivated Mushroom Poster: HMy favorite “vegetable” (well, it’s really a fungus, but whatever…LOL) is the mushroom!

It was understood as I grew up that mushrooms were tasty, yes, but they didn’t have much nutritional benefits other than a bit of fiber and lots of water.

Until last year, this is what I thought. However, mushrooms are chock full of all kinds of special nutrients, vitamins and minerals that can only be found in mushrooms!

In fact, mushrooms are especially healthy for your immune system. Try making a creamy mushroom soup if you’re sick, instead of or in addition to your favorite chicken soup!

The thing is, just until recent years, we were pretty much stuck with only being able to access white button mushrooms at the store. These are probably the least nutritious mushrooms there are that are edible.

Nowadays, you can easily find shiitake, oyster, kind oyster, enoki, crimini and portabello mushrooms to mention a few…

Especially since on October 1st, 2009, the Women, Infants and Children program has started an initiative to encourage mothers to breastfeed because the funding for such things as infant formula, baby foods, juices, and fresh fruits and vegetables has been cut.

Many families will have to pay for infant formula themselves that are on the WIC program.

However, there are ways to decrease your costs on infant formula.

Now, store brand formula, like that which you can find at Walmart’s Parent’s Choice Infant Formula, is of the same quality as other big-name, commercial brands because the FDA regulates the minimum and maximum nutrient specifications for babies.

These types of infant formula is sold at more than 35,000 retailers like drugstores, Target, Walmart, Babies R Us, Sam’s Club, Kroger, etc. and can save parents up to 50% on formula.

In fact, Walmart’s Parent’s Choice Infant Formula is on sale right now.

I looked in my mother’s fridge after returning from my trip to Dallas, hungry for a Fall soup…Running low on ingredients, my mother did have a lot of carrots – Thus, Kimberly’s Creamy Roasted Carrot Soup emerged…

2 lbs Carrots – Cut into 1/2″ pieces

1 large Onion – Peeled and quartered
4 stalks Celery – Sliced
4 cloves Garlic – Peeled

2 tbsp Brown Sugar
1 1/2 tsp Ginger – Fresh, grated is best.

Infant Formulas: Which Brand is Best?

BabyA mother’s breastmilk is the gold standard for infant nutrition.

There’s nothing like it – they simply cannot duplicate this rare commodity in a laboratory.

It has vitamins, minerals and substances that are essential to a baby’s immune system.

If a woman is able to breast feed for the traditional 12 months after the birth of their child, that’s fabulous, but many women simply aren’t able for many different reasons…

…maybe it’s too painful, they’re on  medication, need to return to work in these tough economic times, they have multiple births.

Many women experience feelings of guilt if they are unable to breastfeed at all or for the entire duration of time expected. That’s when they go and buy a very expensive infant formula to compensate for these feelings of guilt instead of the less expensive store brand formula.

Not only that, in many areas of life, we often feel that you “get what you pay for”, so a more expensive formula, which is a safe alternative for babies, must be better and have more nutrition in it. They’re expensive, well advertised and come from a “reputable” pharmaceutical company…Hmmm…

Not so! The FDA regulates infant formula closely to ensure that they’re all nutritionally equivalent. That means that store-brand formulas are just as good for your baby as any other brand out there.

Good to know, right?

Apparently, as of October 1, 2009, WIC (Women, Infants and Children program) is aiming an initiative to increase breastfeeding rates amongst families. They are decreasing their subsidies for infant formula up to 20%, as well as monies for baby foods, juices, and fresh fruits and vegetables for babies.

Not only is breastfeeding the gold standard for nutrition – the best nutrition you could give your baby – but it is cheaper and doesn’t always have to be something a woman can choose to have subsidized if they’re able to breastfeed, unless they want to pay for the infant formula themselves.

So, for these families that either need to or will choose to purchase infant formula on their own, the fact that store-brand formulas are created equally with the much more expensive brands, is very helpful information.

If I need to feed my baby formula, when I have one, I would try to get an infant formula, if at all possible, that’s organic though…
