How to Make a Really Tasty, Healthy Nicoise Salad

Yes, it’s French. No, it’s not difficult to make. No, it’s not really fattening.

Nicoise is just a combination of greens, tuna, green beans, new potatoes, tomatoes, black olives and eggs – traditionally. That’s all it means…

Okay – now that’s out of the way – let’s get cooking and create this unbelievably tasty salad you’ll make over and over again!

Type: Main Dish RecipeFish
Serve With: Creamy Herb Dressing & crusty, French bread
Prep Time: 10 minutes
Cook Time: 20 minutes
Yield: Ingredients are per person – multiply if necessary

  • 1 Tuna Steak – Per person
  • 2 cups Salad Greens – Use torn Romaine, or baby salad greens like spinach, frise – whatever you like

The English and Tea

Personally, I love English or British food, but many people often complain about their ideas about cuisine…

Tea PotsWhat expertise people can NEVER take away from the English is their tea!

(You might have seen my posts about my English Nanny and PG Tips! LOL)

They take their tea drinking very seriously…There are specific rules and times they sit down to have tea! It’s an important thread in the quilt of their existence.

I absolutely love tea and this appreciation started with my English nanny, Doreen.

The thing is, in addition, you can’t simply have tea without enjoying a “bickie” or biscuit. So, be sure you stock up on Christmas biscuits because ’tis the season!

The English are experts in tasty treats like that, namely shortbreads are my favorite.

Another thing my nanny always made sure of was that there were tasty candies around the house.

That may be why we love to make toffee and fudge this time of year.

So, this was intensified around the Holidays. So, in English spirit, break out your Christmas candy and enjoy them! Don’t save them for a special occassion – it is the most precious of occassions!

My English Nanny’s Tasty Tidbits

TeaWhen I was young, I had an English nanny, Doreen. She was a rather influenial part of MyLife.

What an amazing lady that I loved so much. She was so sweet to me, my sister and my family! She always made sure we’d eaten and had something to drink in traditional English style, and that I was prim and proper in a clean, beautiful outfit!

I’ve spoken of her before on my blog when talking about making Southern Style Sweet Brewed Iced Tea:

My Story:
When I was little, I had an English nanny straight from England. The first time she offered to make my mother a cup of tea, at our house, she noticed that my mother didn’t have PG Tips tea. This is a British favorite and is imported from England, but is available at our grocery stores in Canada (especially A&P). She made quite a fuss about us not having the right kind of teabags, and said that we’ve never had a great cup of tea until we had PG Tips. Well, what followed was that she threw out all of our other brands of plain tea. When she came over the next day, she stocked us up with PG Tips.

We’ve been believers ever since, and we always make sure we are stocked up to this day.

In addition to the PG Tips tea, which I’m drinking as we speak, she always gave me these English “bickies” or biscuits called Farley’s Rusks Biscuits. They’re about the size of a human palm and they’re especially for babies, toddlers and children.

You can eat them dry or as Doreen gave them to me, she’d put it in a bowl and pour hot milk on top of it and I’d eat it sort of like a hot cereal.

I have a box of them on my counter right now…They’re rather difficult to find these days. There are times I find them at Nordstrom’s, believe it or not.

She would always call me “her little Kimby”. I can hear her English accent in my head!

We have lost contact with her, but I’m pretty sure she must still be in the area. So, I checked to see if she was on MyLife.com – I couldn’t find her, but it was well worth the try – I mean, my mother and aunts are on Facebook…LOL…

Maybe you can find your lost friends or mentors in your life there…

Thierry & Guy’s Fat bastard Chardonnay

That’s really the name of this “Remarkably full bodied” wine from Thierry & Guy.

Here’s the story from the back of the bottle:

“Good friends, Thierry (renowned French winemaker) & Guy (British wine industry rebel) created FAT bastard almost by accident.

It started out as an experiment Thierry had been doing in the back of his cellar, leaving a barrel “on the lees” (yeast cells). He didn’t know what to expet, but when the friends tried the wine Thierry exclimed…

“Now zat iz what you call eh PHET bast-ard!” (read with a strong French accent)

This very British expression perfectly described the wine’s wonderful color and ROUND, rich palate so that’s what they called it.”

Perfect Hot Toddies in Style!

I just LOVE these innovative NewWave Caffe Mugs! I just purchased some cups with saucers for my mother a few weeks back!

They just totally struck my fancy!

Not only do I like this Mug’s style, I really want to get some of the Latte Macciato mugs for myself…They’re made of clear glass! Just gorgeous!

Not only would they be beautiful to serve delicious lattes, but how about summer berries with cream, or homemade French fries with amazing dips on the beautiful “saucer” to make it look like a painter’s palette?

I want to share with you a favorite drink of mine, especially during the end of summer on those cooler nights, and especially away at the cottage or camping…

The Perfect Hot Toddy

The hot toddy is a hot, mixed, alcoholic beverage believed to have originated in Scotland. Perfect to drink on wet, cooler evenings before going to bed.

Type: Beverage
Serve With: Cinnamon stick
Prep Time: 5 min
Cook Time: 1.5 min
Yield: 1 mug

Ingredients:
Mulled Apple Cider
1/2 tsp honey
1/2 tsp brown sugar
1 shot rum
1 spot butter
1 dash nutmeg
1 cinnamon stick

Instructions:
1. Either in individual mugs or in a small pot, heat mulled apple cider, honey, brown sugar and spices until hot on medium low heat, or in microwave for 1.5 min.

2. Add shot of rum and spot of butter.

3. Serve with cinnamon stick in a gorgeous mug.

4. Enjoy by a campfire under the stars!

Variations of the recipe include using either brandy or whiskey in the place of the rum, and you could also use cloves if desired.

My parents had always enjoyed hot toddies while we were away at the cottage “Up North” in Ontario. It reminds me of those days every time I have a hot toddy.

My mom also says it helps with sore throats!
