Spice Up Your Meals with a Splash!

…A Splash of Rice Vinegar that is!

“Vinegar?”, you may ask…Yes!!!

Try splashing it on freshly cut ripe tomatoes or cucumbers, green salads, hot salads, roasted potatoes, white rice, grilled or broiled seafood, or pasta dishes.

How about adding it to bean salads, coleslaw or to create a unique and zippy sauce?

Why not marinate beef, pork, chicken or seafood with rice vinegar?

Especially if you’re making any type of Asian dish or just looking for a new “je ne sais quoi”, rice vinegar or seasoned rice vinegar will do the trick.

What’s cool, though, about Nakano seasoned rice vinegars, is you’re not limited to Asian food, as they have different flavors that will accomodate anyone’s palate: Original Seasoned, Roasted Garlic, Basil & Oregano, Red Pepper, Balsamic Blend, and Italian Herb.

You can use them in place of balsamic, wine, cider or malt vinegars to give a subtle, but distinctive flavor to your “regular” dishes.

One of my favorite ways to use vinegar, besides mixed with olive oil for salad dressing or bread dipping sauce, is for a “buerre blanc” sauce on pasta or seafood.

Basically, it’s vinegar, butter, sugar, shallots and pepper. Serve over linguine topped with seafood like shrimp, lump crab meat or lobster! Yum!

Contrary to popular belief, probably because green tea is touted to be such a healthy drink for you, green tea has lots of caffeine in it…If you stopped drinking regular black tea because you were trying to cut caffeine out…well, let me tell you that this is not the case.

However, Green Tea has many antioxidants and is good for you nonetheless…

I found a neat test for you to try to see how “caffeined up” you get…LOL…I was deemed a “vibrating crackhead”…I was wondering why I can get so much done and talk so much after I’ve had my green tea…LOL

Kimberly’s Vegetable Barley Soup

vegetablesoup.JPGDelicious, nutritious and meatless! Some nights, I just cannot eat any more meat during the week…This is the perfect recipe for a cold day! Very satisfying because of the barley and beans, which makes a complete protein. ~ Kimberly Edwards ;D

Type: Soup
Serve With: Fresh, crusty bread
Prep Time: ~ 15 min
Cook Time: ~ 45 min
Yield: 1 large stock pot full

* I use organic ingredients for this recipe…

Ingredients:
3 large Carrots – Sliced
1 large Onion – Chopped
3 stalks Celery – Sliced
1 bunch Green Onions – Chopped
1 zucchini – Diced
1 large Beet – I use the greens as well.
2 cloves Garlic – Finely chopped
~ 6-8 Mushrooms – I prefer crimini.
1 cup Whole Kernel Corn – Frozen is fine.
1 large Tomato – Diced
~ 15 Green Beans – Roughly chopped
6 Brussel Sprouts – Quartered
2 Bay Leaves
3 whole Cloves
1 1/2 cups Romano Beans – Cooked or canned are fine.
1 cup Barley – Uncooked
2 tbsp Olive Oil
1 cup Red Wine
1 L Stock – I use Vegetable Stock, but you may use chicken or beef broth if desired.
3 cups Water
Freshly Cracked Black Pepper – To taste
Sea Salt – To taste

Roasted Chickpeas (Leblebi)

Very Vegetable Soup

vegetablesoup.JPGOn those cold days that you just don’t want to eat meat again, try this hearty vegetable soup worthy of your time! Feel free to use whatever vegetables you have!

Type: Soup
Serve With: Fresh crusty bread
Prep Time: 15 min
Cook Time: 1 hr
Yield: 1/2 stock pot full -~ 4 servings

Ingredients:
2 large Onions – Chopped
3/4 cup Celery – Finely sliced
6 large Carrots – Finely diced
6 medium Potatoes – Diced into spoon-sized chunks
1 Sweet Potato – Diced into spoon-sized chunks
1 knob Ginger Root – Peeled & cut in 1/2
3 cloves Garlic – Finely minced
1/3 cup Green Pepper – Chopped
1 Green Onion – Finely sliced
2 tbsp Parsley- Finely chopped
1 stalk Summer Savory – * Optional
3 cups Chicken Stock – Or vegetable stock
2 cups Vegetable Stock
1 cup Water
1/2 cup Wine – Red or White
1/2 cup Pearl Barley
2 tbsp Olive Oil
1 Bay Leaf
1/4 tsp Cayenne Pepper
1 Clove – Whole

Save Money and Make an Easy Salad Bar at Home

One thing I like to do for dinner, that my family loves, is make a salad bar. It’s easy, inexpensive, fun, healthy and is always different; a plus in my book!

The only work involved is making the salad ingredients salad-friendly (cutting them to bite size) and if you want meat and aren’t using leftovers, you’ll need to cook the meat. Thinly slice or chunk up meats, shred cheeses and carrots, thinly slice or chunk up vegetables… the main thing is to get them bite sized and how you like them. A lot of items are already prepared such as nuts, thawed peas, shredded cheeses, croutons (unless you make your own!), and dried fruits.

You can use whatever you have on hand that sounds good to go in a salad, including leftovers (great way to save money). Almost anything goes for salads nowadays, so be creative. After making the ingredients bite-sized, simply put them in lined-up dishes across your countertop or tabletop and include bottles of salad dressing, homemade dressing and/or oil and vinegar at the end.
