Grilling in the Fall – Tailgating Galore

Kids are back to school, it’s cooling off outside (unless you’re in Dallas…LOL), and it’s football season. That’s for certain.
Now’s the time to get outside and enjoy that lovely weather on your patio and grill out.
You can have fun tailgating at home enjoying the Major League Baseball Games, NFL or College football by trying that Texas Tailgating Beer Can Chicken I’ve told you about, but you’ll want a grill worthy of these tasty tidbits.
If you haven’t heard of lynx grills before, I’ve been doing a little bit of research on them.
They are stainless steel grills that are of superior quality and give high performance that use either natural gas or liquid propane.

Melanie Stewart’s “Best Burger in Dallas” at Lone Star Volleyball Club
Now, as you all know, I love BBQ and I love burgers!
What you may not know is that we play sand volleyball every weekend and sometimes during the week when it’s nice weather here in Dallas – either at Lone Star Volleyball Club or at Yucatan Beach Club in Coppell, Texas – they’re right across the street from each other.
Well, when we play at Lone Star, as long as Melanie Stewart is working that day, she makes us the “Best Burgers in Dallas”!
She’ll make you a Lone Star hamburger for $3.50, but it’s hard to resist adding cheese and freshly grilled bacon! Yes, I said grilled bacon! How can you resist, right?
Wow – Melanie has a special spice combination she uses especially for these burgers, which she let me see and smell, and try and guess at the ingredients.
Of course, it has salt, pepper, garlic powder, onion powder and the like, but I CAN’T tell you the rest of the ingredients I guessed – that would give up the secret!

How to Grill Buffalo Burgers – My First Taste

When I say “Buffalo”, I don’t mean the city, although I live very close to Buffalo!
I mean the wild animal roaming the plains of North America – well, they used to anyway.
Now, they’re farmed for their hide and meat.
Kenney and I decided to make Buffalo Burgers the other night after seeing that the price at Whole Foods Market was the same as the ground beef.
What’s wonderful about buffalo meat is that it’s very lean and tasty meat that’s not at all gamey when you buy it in stores.
They made some beautiful burgers for the grill.
How Did I Season Those Buffalo Burgers?
This time, I went pretty plain because I really wanted to enjoy the subtleties of the meat itself without anything changing the flavor.
I used some pepper, a tiny bit of sea salt and a little bit of freshly minced garlic.

How to Marinate Meat

I am a marinating queen! I love flavor!
When I have a marinating steak, I love to experiment with flavors, but often falling back on my “trusty rusty” recipe I’ve used for ages.
* Tip: When marinating, you don’t need to be precise with your measurements. Just be sure you have enough marinade in the container to completely coat the meat.
Have a large Ziploc-type bag ready. Rinse steaks under cold water and place in bag. Add olive oil, some red wine or beer, 1/4-1/2 lemon squeezed and zested, bay leaf, freshly cracked black pepper, chopped onions, freshly minced garlic and chili flakes.
* Tip: I don’t use salt as this can make the meat tough when marinating. Sprinkle sea salt on steak when grilling, if desired.

Calamari – Australian Style

What was my very favorite thing I ate when I was in Australia?
If I was pinned down to have to answer this, I would say it was the calamari!
I’d never had calamari any differently than the breaded and fried version, as you would get at Olive Garden here in America.
They don’t make it like this in Aussieland, unless you go to a fish & chips shop…No, No, No!
