How to Make a Really Tasty, Healthy Nicoise Salad

Yes, it’s French. No, it’s not difficult to make. No, it’s not really fattening.

Nicoise is just a combination of greens, tuna, green beans, new potatoes, tomatoes, black olives and eggs – traditionally. That’s all it means…

Okay – now that’s out of the way – let’s get cooking and create this unbelievably tasty salad you’ll make over and over again!

Type: Main Dish RecipeFish
Serve With: Creamy Herb Dressing & crusty, French bread
Prep Time: 10 minutes
Cook Time: 20 minutes
Yield: Ingredients are per person – multiply if necessary

  • 1 Tuna Steak – Per person
  • 2 cups Salad Greens – Use torn Romaine, or baby salad greens like spinach, frise – whatever you like

Salmon Cakes Made in a Bare Bones Fixer Upper Investment Property Kitchen

Salmon Cakes

When you’re tired of those salmon or tuna sandwiches and need something a little bit different when you’re living in and repairing a fixer upper investment property, have no fear! I have an idea for you!

I know, you may not have a refrigerator because the electricity may not have been upgraded yet, right? That’s often the case.

That’s okay too, you won’t even need an egg for cooking these…You’ll see!

Instructions:
Grab your can of salmon (or tuna or crab meat), drain off the liquid and put into a bowl or baking dish to mix in.

Since you may not have a large variety of seasonings available, I’ll keep it simple: pepper, cayenne pepper or red chili flakes, garlic powder.

Okay, I’m sure you still have a slice or 2 of bread left – so, take one and break it into tiny, tiny pieces to mix with the salmon.

Nakano Rice Vinegar Salmon Salad Recipe

That’s right…

It’s made from real rice and has a fabulous flavor, and has so many different uses in so many dishes I make.

Salmonsalad

Take this Salmon Salad for instance…

Salmon Salad with Tomatoes, Capers and Dill Vinaigrette

2/3 cup NAKANO Seasoned Rice Vinegar Roasted Garlic or use the “Original”
2 cloves crushed garlic
1 1/2 tsp dried dill weed – Divided
1 tsp salt
4 salmon fillets ~ 5 ounces e/
3 tbsp extra virgin olive oil
16 asparagus spears
2 medium tomatoes – Diced
1 tbsp capers
Hearts of Romaine lettuce

1. In a bowl, combine the rice vinegar, garlic, salt and 1 tsp dill to make a dill vinaigrette. Stir well.

2. Place salmon fillets in a shallow container, like a tupperware (as long as it’s non-metallic).

3. Add 4 tbsp dill vinaigrette and marinate for 30-60 minutes.

4. Drain salmon and discard of marinade.

5. Grill or sauté salmon, starting with the skin-side down, until cooked as desired ~ 3-4 min each side. Set aside.

6. Add olive oil to remaining vinaigrette. Blanch the washed and prepared asparagus and place in a shallow, rimmed dish. Drizzle 3 tablespoons of the vinaigrette over top of the asparagus.

7. Combine tomatoes, capers, 2 tbsp vinaigrette and remaining 1/2 tsp dill weed.

8. Arrange washed and torn romaine lettuce and 4 asparagus spears on each serving plate.

9. Remove skin from the salmon and place one fillet on each plate.

10. Add a generous amount of tomato mixture over salmon, lettuce and asparagus. Serve with remaining dill vinaigrette, as desired.

This recipe will Serve 4.

Salmon may be served hot or at room temperature.

Perfect Pan Sauteed Tilapia

Kimberly’s Super Salmon Cakes

Art Poster Print - British Columbia Red Salmon - Artist: unknown- Poster Size: 12 X 24I just love salmon cakes, tuna cakes, crab cakes, lobster cakes…the list goes on and on…This is a great and quick recipe for a quick lunch, appetizer, or for the main dish at dinnertime. Type: Main
Serve With: Sour cream, chives and dill.
Prep Time: 5-8 min
Cook Time: 10 min
Yield: 6 salmon cakes

Ingredients:

Instructions:
1. Heat frying pan to medium heat with canola oil in it.

* Tip: When you don’t want to add any extra flavor from your oil, use canola or vegetable, as they are relatively tasteless.

2. Combine all ingredients in large bowl, and allow to stand for a few minutes, so that the crumbs can soak up the liquids.

3. Form 6 cakes/patties.

4. Turn heat down slightly, and pan fry for ~ 5 min on the 1st side, then ~3-4 min on the 2nd side, or until golden brown on both sides.

* Tip: Try to only turn patties once, as they are more delicate than a burger patty, for example.

5. Serve with a dollop of sour cream on top, and chives and/or dill sprinkled on top.

6. Enjoy!

This one was a winner at our house! Quick, delicious and easy to make! Superb!

Enjoy The Sunset of Summer With A Healthy Barbecue Or Picnic

img_1204.jpgSummer is coming to a close…It is truly the Sunset of Summer…Don’t you want to enjoy the last bit of summer barbecuing out on your deck or picnicking in the park with family and friends? Well, I certainly do, and I intend to.

If you’re anything like me, you are trying to soak up every last ray of sunshine of the summer. I am even working outside, instead of at our kitchen table. I am not a huge fan of winter, except for the wonderful food we make! I will enjoy the Indian Summer!

new-pics-040.jpgIn fact, last week, we enjoyed everyday outside on the deck of our cottage! What a de-stresser. Not only did we eat deliciously, but we enjoyed each other, and the sunshine! (Yup, that’s me in the photo, enjoying every minute of it!)
