Mushrooms with Port Wine and Balsamic Sauce

Every single birthday or special occassion, he asks me to make homemade macaroni and cheese, alongside mushrooms with port wine and balsamic sauce. Strange, but true! It’s his 2 favorite dishes I make in one…LOL

Type: Side Dish Recipe or Sauce Recipe
Serve With: Filet mignon or a great steak
Prep Time: 7 min
Cook Time: 12-15 min

Ingredients:
24 oz. Mushrooms – Use a variety of different mushrooms – Sliced
1 Onion – Diced
1 large clove Garlic – Or 2 smaller ones, finely minced
1 1/2 tbsp Olive Oil
1 tsp Butter
1/4 cup Port Wine – Cooking Sherry or another fortified red wine
2 tbsp Aged Balsamic Vinegar – Aged from Modena is best.
4 leaves fresh Basil – Chiffonade
2 tbsp fresh Parsley – Chopped

Don’t Rinse Your Pasta: How to Cook Pasta

Kitchen Collection 5 Quart Enamel Colander RedWhen you’re cooking pasta, don’t rinse it afterward when you drain the water off.

Why?
If you do, you rinse of the starch that will hold your sauce on the noodle.

Plus, you’ll cool down the pasta to a much lower temperature, even if you rinse it in warm water.

So, just drain your pasta in a colander or strainer, pour it back into your pan or pot and drizzle olive oil or melt some butter into it until you finish adding your sauce.

Kimberly’s Low Fat Rigatoni Primavera

This recipe was written for serious endurance and professional athletes in mind…like my hubby!

Even if you’ve promised yourself, or loved ones, that you would take a “break” over the holidays with your athletic training, I know you…You’re sneaking in a “little” bit of practice in anyway. So, for those “sneaky” days, you need your carbs! Here is a great, but low-fat, pasta dish that will knock your socks off and keep your energy high!

Quick, easy and low-fat! I love any variation of pasta primavera! This is my one of my hubby’s favorite dishes, as it is quick, low-fat and filling too! He loves it as leftovers as well! Perfect for a quick meal between the holidays, and a great break from the same leftover holiday turkey.

Type: Pasta
Serve with: Garlic Bread
Prep time: 5-10 min
Cook time: 15-20 min
Yield: Serves 5

Nutrition Facts:

Using turkey sausage instead of pork greatly reduces the calorie and fat intake in this meal. With all of the great smoked turkey sausages these days, you aren’t compromising in flavor either!

Easy Weeknight Pasta Dish in 30 Minutes

Last night, my hubby, Kenney, decided to “document” what I was cooking for dinner.

Firstly, it had been a very busy for the entire household and come 8:00 pm, as I had just got home shortly before then, no one else was going to cook.

Kimberly’s “Non-Italian” Minestrone Soup

Minestrone Day Print By Linda HutchinsonI enjoy Italian soups, but my mother always prefers a more rustic version with more vegetables, and less spices and flavors. So, I’ve decided to make my “Non-Italian” Minestrone Soup for us tonight! ~ Kimberly Edwards :)

Type: Main – Soup
Serve With: Fresh, Crusty Italian or French Bread
Prep Time: 20 min
Cook Time: 2 1/2 hrs.
Yield: 1 large stock pot full

Ingredients:
4-5 pieces Bacon – Sliced or chunked
1/2 tbsp Olive Oil
2 cups Celery – Sliced
2 medium Onions – Well chopped
3 Green Onions – Chopped

4 large Carrots – Sliced

Two Guys From Italy – Dallas, Texas – Restaurant Review

We experienced the Italian cuisine from a restaurant in Dallas called “Two Guys From Italy”.

I Love Pasta Italian Women's Light T-ShirtAs you know, we are Italian food freaks, and love to try new places out. We loved that their motto is “Our English She’s No Good…But Our Food Speak More Better“…LOL…

We had the Lasagna with meat sauce and sauteed mushrooms. I am really picky about my tomato sauce, and this one was A+ in my books…just like homemade…Wonderful flavor. The lasagna itself was fantastic too!

I always love soup, so we tried the Minestrone soup, and let me tell you, it really tasted homemade. Great veggies in it, that even I wouldn’t have expected, but that went very well…like broccoli. The integrity of the minestrone was stellar!

All in all, we were extremely satisfied and happily surprised at how great this little find was. Very reasonable prices (lasagna was $8.45 + $1.45 extra for the mushrooms, and minestrone was $1.45).

Is It Just Me or Has Olive Garden Changed Their Calamari Recipe?

So, usually, I love how Olive Garden makes their calamari, but the last 2 times I had it, I felt that the batter was somewhat different.

Also, I think they have changed their creamy aioli-type sauce…it tastes more parmesany or something…I’m not as crazy about this appetizer as I was before…

My husband wasn’t too sure if the recipe had changed or not, and he quite enjoyed the calamari still.

What are your thoughts on the Calamari at the Olive Garden? Is it just me or has the recipe changed?
