Yes, it’s French. No, it’s not difficult to make. No, it’s not really fattening.

Nicoise is just a combination of greens, tuna, green beans, new potatoes, tomatoes, black olives and eggs – traditionally. That’s all it means…

Okay – now that’s out of the way – let’s get cooking and create this unbelievably tasty salad you’ll make over and over again!

Type: Main Dish RecipeFish
Serve With: Creamy Herb Dressing & crusty, French bread
Prep Time: 10 minutes
Cook Time: 20 minutes
Yield: Ingredients are per person – multiply if necessary

How to Make Healthy Creamy Herb Salad Dressing

Just because it’s healthy, doesn’t mean it has to be tasteless and no fun…

I dare you to eat healthier and more deliciously – try this dressing on your next salad…You’ll be glad you did.

Type: Sauce Recipe
Serve With: Salad,on baked potatoes or as a dip – Perfect for Niçoise Salad
Prep Time: 5 min
Yield: About 6 servings

Ingredients:

  • 1 cup Plain Yogurt – I prefer Balkan style; Don’t skimp here – get higher fat, organic
  • 2 tbsp Kefir – Or buttermilk; Did you know buttermilk is actually low in fat despite the name.
  • Juice of 1/2 Lemon
  • 1 tsp Mayonnaise – Use organic or homemade; I prefer Polish mayonnaise for taste.
  • 1 tbsp Chives – Finely chopped; or green onions
  • 1 tbsp Parsley – Freshly chopped

Chipotle Steak Salad Bowl Rocks: Dallas Restaurant Review

Chipotle : 0890878285I’ve never had a Chipotle restaurant meal that I didn’t love.

Their burritos are huge like FreeBirds, their salad bowls are my favorite, burrito bowls look amazing, etc.

They have chicken, steak, ground beef, barbacoa and I believe one other type of meat to choose from.

I always grab a salad bowl…they’re so filling even though it’s salad. They come with their signature Chipotle-Honey vinaigrette that’s superb.

Nakano Rice Vinegar Salmon Salad Recipe

That’s right…

It’s made from real rice and has a fabulous flavor, and has so many different uses in so many dishes I make.

Salmonsalad

Take this Salmon Salad for instance…

Salmon Salad with Tomatoes, Capers and Dill Vinaigrette

2/3 cup NAKANO Seasoned Rice Vinegar Roasted Garlic or use the “Original”
2 cloves crushed garlic
1 1/2 tsp dried dill weed – Divided
1 tsp salt
4 salmon fillets ~ 5 ounces e/
3 tbsp extra virgin olive oil
16 asparagus spears
2 medium tomatoes – Diced
1 tbsp capers
Hearts of Romaine lettuce

1. In a bowl, combine the rice vinegar, garlic, salt and 1 tsp dill to make a dill vinaigrette. Stir well.

2. Place salmon fillets in a shallow container, like a tupperware (as long as it’s non-metallic).

3. Add 4 tbsp dill vinaigrette and marinate for 30-60 minutes.

4. Drain salmon and discard of marinade.

5. Grill or sauté salmon, starting with the skin-side down, until cooked as desired ~ 3-4 min each side. Set aside.

6. Add olive oil to remaining vinaigrette. Blanch the washed and prepared asparagus and place in a shallow, rimmed dish. Drizzle 3 tablespoons of the vinaigrette over top of the asparagus.

7. Combine tomatoes, capers, 2 tbsp vinaigrette and remaining 1/2 tsp dill weed.

8. Arrange washed and torn romaine lettuce and 4 asparagus spears on each serving plate.

9. Remove skin from the salmon and place one fillet on each plate.

10. Add a generous amount of tomato mixture over salmon, lettuce and asparagus. Serve with remaining dill vinaigrette, as desired.

This recipe will Serve 4.

Salmon may be served hot or at room temperature.

How to Make a Super Simple Vinaigrette Dressing

Casbah Tabouli – Garden Wheat Salad Mix – Product Review

Do you like Tabouli (Tabbouleh)?

If you’ve never tried it, you must! If you like it already, and either don’t know how to make it or don’t feel like it, then try this awesome mix for it!

Casbah Brand Tabouli – Garden Wheat Salad Mix is a fantastic product!

We love this in our household and make it often. It has more bulgur (wheat) in it than the typical tabbouleh salad you would get at a Mediterranean restaurant, but is so delicious!

It is really quick, easy and tastes great either warm or cold. You can eat it as a salad or use it as a stuffing for tomatoes, bell peppers, zucchini or grape leaves.

I have even used it for Kimberly’s World Premier Tabbouleh Bread!

Now, sometimes, when we don’t have beautiful tomatoes from the market, we’ll used our own canned tomatoes and just crush them up! Gorgeous!

It is low in fat, and excellent source of iron and is cholesterol free! Awesome!

I do hope you’ll try it…It is really a great product and a good staple to have in your pantry at all times!

Famous Famiglia Pizzeria – Restaurant Review

Okay, you’re at the airport, and you are STARVING…What to do? Find the first restaurant you can that interests you, right?

Well, I picked the Famous Famiglia Pizzeria in Terminal A of the Washington Dulles Airport

I probably should have had the “famous” pizza, but instead felt like pasta…I got penne with tomato sauce and a garden salad…

Well, the penne with sauce was just that…penne with sauce…it was ok…it filled me up…They did give me a good portion for a small order.

The salad was fresh and had beautiful, large slices of Roma tomatoes, radishes, cucumbers, shredded carrot and romaine lettuce. They give you a packaged Italian salad dressing, but the salad was just what I needed.

The next time, if I stop here, I will probably try a piece of pizza or stromboli…probably the stromboli, knowing me…

It was ok…I give it a 3 1/2 stars.

Eggstra Perfect Egg Salad

This is the perfect recipe to use up all of those hardboiled, colored eggs from Easter! My favorite way to eat egg salad sandwiches are when the eggs are still warm from being cooked! Yum! I even like egg salad for breakfast!!!

I always try to add healthy ingredients whenever possible…flax seeds are great in this recipe!
