Many mushrooms come in dried forms and some exotic mushrooms only come in dried forms in stores. Trumpet, lobster, maitake, morrels, chantrelles, porcini, miscellaneous “field” mushrooms, and truffles all come dried. When you see them in their packages, you might be thinking, “Hmmm…That sounds cool, but how can I use them?” First off, dried mushrooms are great additions to creamy dishes, sauces, pastas, stuffings, soups and egg dishes too. However, [ Read More ]

My favorite “vegetable” (well, it’s really a fungus, but whatever…LOL) is the mushroom! It was understood as I grew up that mushrooms were tasty, yes, but they didn’t have much nutritional benefits other than a bit of fiber and lots of water. Until last year, this is what I thought. However, mushrooms are chock full of all kinds of special nutrients, vitamins and minerals that can only be found in [ Read More ]

I love Asian food and I even love cooking Asian food at home. The problem, for most people, however, is that Asian food often requires a lot of ingredients that are otherwise not used in other cuisines. These ingredients can get expensive because Asian flavors are very complex and you only use a little bit of many seasonings, which may also go bad before you could use the entire bottle [ Read More ]

My good friend, Melania McCarley, from Dallas, Texas has made us this delicious treat a few times when we’ve visited her home. She is Costa Rican and creates really tantalizing tidbits like chimichurri, also known as pico de gallo (be sure to click that link for her original recipe). I’ve never had a Chipotle restaurant meal that I didn’t love. Their burritos are huge like FreeBirds, their salad bowls are my favorite, burrito bowls look amazing, etc. They have chicken, steak, ground beef, barbacoa and I believe one other type of meat to choose from. I always grab a salad bowl…they’re so filling even though it’s salad. They come with their signature Chipotle-Honey vinaigrette that’s superb. * Tip: Don’t [ Read More ]
